Parotta Salna is nothing but different style of making korma.Salna is especially made for parotta, a south Indian speciality.Parotta is plain with more oil, a spicy gravy like salna goes best with parotta.There are many varieties of salna like chicken,plain,vegetable salna.In this post i explain chicken salna.To make vegetable salna replace chicken with finely chopped beans,carrot,peas,cauliflower etc.

How to make parotta chicken salnaCuisine: Indian Category:Breakfast | dinner Yields:3 cups Prep time:15 minutes(apart from marinating chicken) Cook time:45 minutes Total time:60 minutes
Ingredients to grind:
- 1 tbsp oil
- 1 onion(large)/vengayam
- 1 large tomato+1/2 country tomato/Thakkali
- 3 cloves/krambu
- 1 cardamom/elakai
- 2 inch cinnamon stick/Pattai.
- 3/4 tsp chili powder/Milagai thool.
- 2 tsp coriander powder/Malli thool.
- 1/4 tsp turmeric powder/Manjal thool.
- 1/2 tsp jeera/Jeeragam.
- 1/2 tsp pepper/Milagu.
- 1/2 tsp poppy seeds/kasa kasa.
- 2 tbsp coconut/thengai.
- 1/2 kg chicken/around 1 pound/koli.(marinate with 1/2 tsp ginger garlic paste,1 tbsp yogurt,1/2 tsp chili powder,1/8 tsp turmeric powder).
- 1 tbsp oil
- 1 onion (chopped fine)/vengayam
- few mint leaves/pudina.
- salt and water required.

How to cook Parotta salna or chicken salna:
If you are looking similar South Indian chicken check:
- Marinate the chicken the day before with 1/2 tsp ginger garlic paste and 1/2 tsp chili chicken masala and 1 tbsp of yogurt and little turmeric.
- Lets get everything for saute ready.
- Heat 1 tbsp oil in tava.Add tempering cardamom,cinnamon,cloves and saute for a minute.
- Add onion and saute until translucent.
- Add tomatoes and cook it thorough.
- Add chili powder,coriander powder,turmeric powder as well.
- Saute it for a minute.
- Finally add grated coconut, poppy seeds and switch off the flame.
- Cool it and grind it to a very smooth paste.
- Add 1 tbsp of oil to the saute pan and add ginger garlic paste and onions.
- Saute until translucent.
- If adding more tomatoes add it now and saute until its mushy.
- Add mint leaves and saute for a few minutes.
- Add chicken pieces ,ground masala.Add required salt when the chicken is half cooked .
- Let the chicken be in simmer.It has to get the flavor from the spices/masala.
- At 40-45 minutes chicken gets the flavour and is ready to be served.
- Parotta salna is ready to be served along with parotta,idly,dosa
