Gond Ke Laddu Recipe | Urad Dal Gond Laddu | Winter Recipes

Gond Ke Ladoo /Laddu is a perfect winter treat and especially for lactating mothers.I came to know about this when i was talking to my friend about my back pain and she said some edible gum helps in recovering from it.I also saw spusht nisha post.She mentioned that it is good for lactating mothers .


     When i was searching for the recipe i came to know that these are popular in Rajasthan,Gujarat and Maharashtra and is eaten during the winter months.These are highly nutritious and cannot be digested easily so people used to eat it at morning to give time for digestion.
     This recipe also got urad dal flour.I know urad dal is good for uterus. In our community after puberty girls will be given lots of uluthan Kali a sweet made with urad dal and jaggery along with ghee or gingelly oil to strength the back.So this combination of urad and gond must be a healthy and delicious treat for ladies during winters. This can also be given to kids along with a glass of milk. They will surely love because of the sweetness and rich taste.

       Other Names include 'panjiri' .'Dink ladoo' or 'dinkache ladoo' in Marathi .It is called as also 'Guntar ladoo' in Gujarati.
     While doing i couldn't make the flour come to sandy consistency so i roasted until the raw smell of urad dal powder is gone.After adding the nuts the flour has come together so it is not difficult for me to shape them.Also i added chopped dates instead of dates powder mentioned in the original recipe.I suggest you add the ghee mentioned as i read this edible gum creates heat in body. Ghee reduces the heat in body.
      Original recipe calls for grinding the urad dal to batter but i had used flour instead.If you can do grinding then follow the same procedure by adding the batter instead of flour.

Step by step picture recipe for making gond ke laddu:
  • Grind cashew and almond to coarse powder.

  • Roast poppy seeds and add to blender.Roast coconut for few minutes .Grind poppy seeds and coconut flakes to powder .

  • Roast gum in 1 tsp ghee on a slow flame without burning.It will pop like a popcorn.Add remaining ghee to a pan .
                     

  • when its hot add wheat flour  and roast it for 5 minutes or until the raw smell goes off.Add urad dal flour to the ghee and mix it very well.Roast for another 5 minutes or until it gets a sandy consistency.

  • Add ground nut powder and coconut powder as well and give a mix.Add nutmeg,cardamom ,dates and raisins.Now everything will come together.Finally when the dough is hot add jaggery.if adding sugar you can make a thin syrup and add to the mixture.I added grated jaggery as is to cut short the time.

  • After the dough comes to normal temperature(warm) make laddus of desired size.
  • Eat every morning along with milk.

Ingredients:
  • edible gum/gond(1/2 cup) roasted in 1 tsp ghee.
  • 1 1/2 cup sugar(I used 1 cup jaggery and 1/2 cup sugar).
  • 1 cup ghee/nei.
  • 1 cup wheat flour/gothumai maavu.
  • 1 1/2 cup urad dal flour/ulunth maavu.
  • 1 cardamom/elachi/elakai.
  • little nutmeg.
  • 1 cup dates chopped.
  • few raisins.
To Grind:
  • 3/4 cup cashews.
  • 3/4 cup almonds.
Roast and grind:
  • 2 tsp poppy seeds/kasa kasa.
  • 1 cup shredded coconut/dried coconut.
Method:

  • Grind poppy seeds and coconut flakes to powder .
  • Grind cashew and almond to coarse powder.
  • Add ghee to a pan ,when its hot add wheat flour  and roast it for 5 minutes or until the raw smell goes off.
  • Add urad dal flour to the ghee and mix it very well.Roast for another 5 minutes or until it gets a sandy consistency.
  • Add ground nut powder and coconut powder as well and give a mix.
  • Add nutmeg,cardamom ,dates and raisins.Now everything will come together.
  • Finally add jaggery when the mixture is warm.So it gets melted in the heat.If adding sugar you can make a thick syrup and add.
  • I added jaggery as is to cut short the time.
  • After the mixture comes to normal temperature(warm) make laddus of desired size.
  • Gond ke laddu is ready.Eat every morning along with milk.source from here
Note:
  • Eating too much of this will bring constipation.Remember its a gum.
  • Drink enough water to avoid any difficulties.
  • If adding jaggery syrup ,make ladoo when the mixture is hot otherwise it will become hard and it will be difficult to handle.

  4. Thank you for sharing the benefits of Urad Dal and Gond. I was aware that Gond was good for lactating mothers as a Punjabi friend of my mum-in-law kept a constant supply of pinni after I delivered. But I was not aware of the benefits to back pain. Off late I have developed upper back pain and would definitely try making these laddos and having them. The kind I have tasted before, has all these ingredients except Urad dal. So will include Urad dal and intake its goodness too. Thanks for sharing these useful information.
