Masala chai/tea is a homemade tea made with Indian spices.The spices added ground or fresh ones makes the beverage extraordinary than regular. The aroma of the spices when the water is boiling and the minute when tea powder separates in the boiling water and when you add milk it all becomes one in all.You sure will long to make it twice daily.
We used to drink milk from birth, mom never gives any caffeine's.I got used to this habit while I was working. Drinking tea is just a pass time when there is less work at office.Me along with my colleagues go to far off cafeteria at evenings,when busy we just go to the upstairs cafeteria.Can you imagine drinking tea from the tea machines?.It's made out of powdered milk with some not so hot water and those cubed sugars/ sugar packets make the situation even worse.After some days, I don't want to go near the machines anymore.
What I mean is Nothing can beat the fresh aromatic homemade tea with real milk and fresh spices, Agree with me?This one is among those delicious varieties of tea we relish once in a while otherwise I just add some fresh mashed ginger piece.
If you are out of spices or have an excess of garam masala powder you can even add that.If you like nutmeg, star anise you can add so.I don't have so didn't add.I warn you Better use the spice in moderation otherwise you will feel like drinking garam masala itself (he he).
Are you looking for some deep fried munchies like mixture, cabbage vada, soya burger to go along?Sure you have to indulge in them once in a while. At the cold evenings or on the dull afternoon's you can accompany some simple sandwich toast with this masala chai to make a scrumptious meal.I accompanied mine with some Marie biscuits. - Add 3/4 cup of water to milk boiler/pot.Add cardamom pods, cinnamon stick, clove,Ginger Piece to it.Let the water boil until you get the spice aroma.Say like around 2-3 minutes
- Now add tea powder to the water.Let the powder boil for again 2-3 minutes.
- Add 1 1/2 cups of thick milk to the pot. This has to boil or spill over.
- Reduce the flame and add sugar or jaggery to taste.You have added spices so add little more than regular sugar.
- Give a gentle mix.Switch off the flame and filter.
- Serve immediately with your favorite accompaniment.

- 2 clove/krambu.
- 1 small piece cinnamon stick/pattai.
- 1 small ginger piece/Inji.
- 1 1/2 cup whole milk/paal.
- 2 tsp tea powder.
- 2 tbsp jaggery/sugar/vellam.
- Add 3/4 cup of water to milk boiler/pot.Add cardamom pods, cinnamon stick, clove,Ginger Piece to it.
- Let the water boil until you get the spice aroma.Say like around 2-3 minutes
- Now add tea powder to the water.Let the powder boil for again 2-3 minutes.

Even my mom never gave us any tea or coffee... I don't do that with my kids as well, I give both of them one full cup of milk every day morning and they drink it without any fuss. I want to continue that habit till they will stop. The kids do drink tea when we go to relative's house because they will make cold cups ready for them without even asking... :/ I love masala chai. My normal tea has cardamom and dry ginger all the time, but when I feel lousy, then it is a full bloodied tea loaded with all spices... :)
