Soya Burgers a delicious cutlet made with soya kheema. I used nutrela soya granules for making this healthy snack.Its the best vegetarian protein apart from lentils.I am calling it Indian version of cutlets as i added chili powder ,coriander powder as the spice instead of pepper powder. These spices makes the plain soya granules taste delicious.I added fresh coriander leaves as well.
Cutlets/patties/burger can be a best snack or can be a great breakfast when added to burger buns or sandwich breads along with vegetables like lettuce,spinach and some creamy dip like avocado. For a fresh start of the day ..these Home made cutlets give the satisfaction of making from scratch .Its indeed healthy,more nutritious and also very clean.
You can also use soya chunks instead of granules after boiling and mashing.I added potato for base or for everything come together instead you can use mashed rice or sweet potato.You can also add vegetables like corn,beans,carrots after boiling or you can even chop them to very fine pieces and add.If you see more water while making ,add some rice flour to make the dough tight.
I prefer to roast the cutlets on tava without any bread crumbs.Adding of bread crumbs increase the calories,so haven't added it.You can deep fry the patties but keep an eye on them. It will turn brown very soon.

Step by step picture recipe for making veg kheema cutlets:
- Pressure cook potatoes. Peel and mash it well.
- Add soya granules to boiling water.Switch off the flame.Let it sit in water for 2-3 minutes until it doubles in size.Filter the water and wash kheema with fresh cold water.Squeeze the water out and keep it ready.
- Thaw the green peas and mash it.Chop onion ,green chili and add it to potatoes.
- Add granules ,peas ,masala powder,coriander leaves and required salt as well.Combine well and make balls .If you like bread crumbs dip in thick rice flour paste and then dip again in bread crumbs then pat it.
- When the tava is hot sear it.This gives a crust on the outer layer.Add oil to top and bottom.Flip and cook until the outer layers are crispy(at least 10 minutes both the sides combined).
- Soya patties are ready to be relishes.This can be best snack ,appetizer or to go in your sandwiches.
- We enjoyed with avocado cream.

- 2 potatoes(boiled).
- 1/2 cup soya granules/nutrela.
- 1 green chili/pacha milagai.
- 1/4 tsp chili powder/milagai thool.
- 1/2 tsp coriander powder/malli thool.
- 1 tsp sat (or as required).
- few coriander leaves/kothamalli ilai.
- 1/8 tsp turmeric powder/manjal thool.
- 1/4 cup green peas(frozen and thawed)/pattani.
- 1 tbsp rice flour/arisi maavu.
- 1/2 onion chopped to fine pieces/vengayam.
Method:
- Pressure cook potatoes. Peel and mash it well.
- Add soya granules to boiling water.Switch off the flame.Let it sit in water for 2-3 minutes until it doubles in size.
