South Indian Style Coriander Rice Recipe | Step by Step Pictures

            Coriander rice a simple rice recipe that can be made very quick. This is a south Indian style recipe which is different from a Mexican cilantro rice. Have some leftover rice? Yes !! I never want to waste my food.I feel very bad if I am throwing something. You can make fresh white rice there is no harm in that too. When talking about the taste,We got mesmerized really and loved the simplicity. Even bachelors can make an attempt on this simple meal.

         I love coriander for the unique flavor it imparts to any dish.If you want to enjoy its flavors without much spice try making pani puri.It is one of the ways to enjoy the fresh herbs.Absolutely no frying and you get all the nutrients you want.I too make them rarely.In my daily routine I will try to include in the way of  kothamalli thokku,coriander coconut chutney,mint cilantro chutney,mint pulav also on  dal and north Indian curries.
   Coriander has more vitamin k which helps in blood coagulation .Without it, bleeding will not stop when you get hurt. It helps in maintaining the bone health and also lower blood pressure and cholesterol.Try to include fresh leaves whenever possible.In this recipe, I cooked cilantro for some time. So it may lose some nutrients. This nutrition info is just a quick check for diet conscious people.

     You can also try to cook a one pot meal.But I prefer not to do for two reasons.One is, rice will go mushy .Second is, there will not be any more nutrients present in a well-cooked paste.

Step by step picture recipe for making south Indian coriander rice:
  • Pressure cook rice with 3 cups of water for a whistle.You can cook in whatever method is comfortable for you.Cool and keep it aside.Add oil to the tava. When it is hot, add mustard seeds and jeera.

  • When the seeds crackle, add onion and saute until it turns translucent.
  • Add peas to the tava as well. Cook until peas are cooked thoroughly(like 2-3 minutes).I added frozen.If using fresh then it will take at least 7-8 minutes).

  • Grind the ingredients 'to grind' to a fine paste without adding any water.Add the ground paste to the pan and cook until the raw smell goes off( 3-4 minutes).If there is no enough water try adding few tbsp.Be careful it may be burnt if there is no water.
  • When the paste is thick, check the salt and spice. Add more if you want.

  • Finally, add cooked and cooled rice and mix thoroughly.

  • Serve with a gravy or papad.

Ingredients:
To grind:
  • 1/2 bunch coriander leaves(1/4 cup puree without water).
  • 2 green chilies/pacha milagai.
  • 1-inch ginger/inji.
To saute:
  • 1 onion (finely chopped)/vengayam.
  • 1/4 cup peas/pattani.
  • 2 tbsp oil.
  • 1/2 tsp jeera/jeeragam.
  • salt as required
  • 1 1/2 cup cooked raw rice/pacha arisi.
Method:
