Burrito a national dish of mexico.Authentic burrito's are made with all purpose flour and are called flour tortillas.Burritos are often totally wrapped around the filling completely like a wrap and filling varies.Burrito fillings are only meat and refried beans in mexico.
Now tortillas are available in wheatflour for diet watchers.Green - Spinach wheat tortillas are even healthier option.
Being in a mexican neighbourhood i got to try(eat and make) few mexican dishes by visiting neighbouring mexican restaturants.My only fav is cheese enchiladas made with mexican oxaca cheese and roho sauce..
According to me authentic taste of any cuisine can be tasted only in similar restaurant.Like we say fried rice must be good at chinese restaurants and sambar taste great in South Indian restaurant likewise ..I assure you there is always veg options available for vegetarians in most mexican restaturants ,or at least in US.
I love corn tortillas. so i used corn tortillas for burrito.These are small compared to flour tortillas and are obviously made with corn flour.These corn tortillas making is quite difficult, like any millet flour.I often buy corn tortillas from local mexican grocery.
My favorite filling in any mexican recipe is beans.I always make refried beans from scratch(there is obviously no additives).This time i am short of black beans,so made vegetarian kidney bean burrito instead.Kidney bean sure give a little taste variation,but that is not so dominant.You can include veggies too,So this burrito is versatile.Feel free to add what ever vegetables you like or have ,to make a filling, if you don't have avacados.
Being an Indian, i added indian spices to make beans.If you have mexican spice mix you can add so.
If you have leftover rice then this vegetarian kidney bean avacado burrito can be made in under 20 minutes.This sure is a very filling party-dinner option,but sure can be less messy.

How to make vegetarian burrito with kidney bean and avacado fillingCuisine: Mexican Category:Lunch/Dinner/Brunch Serves:3 Prep time:10 minutes Cook time:20 minutes Total Time:30 minutes
Ingredients:
- 2 avocados.
- 2 lime.
- 1 1/2 -2 jalapenoes.
- 1 onion.
- 3 garlic.
- few coriander leaves.
- 1 cup mashed black bean/kidney bean.
- 1 cup cooked rice.
- 7-8 tortillas.
- 1/4 tsp chili powder.
- 1/4 tsp coriander powder.
- Wash avacados,lime,coriander leaves,jalapeneos.
- Chop avacados and prepare guacamole.
- Soak kidney bean for 6-8 hours .Drain excess water.
- Pressure cook the beans until mushy.
- Add oil to tava and add 1 chopped garlic and few jalapeaneos to tava and saute it.
- Now add chili ,coriander powder to tava.Saute for a second.
- Add pressure cooked beans and required salt as well.
- Beans has to boil and get the flavors of spices.
- Finally added chopped coriander/cilantro leaves to beans.
- Refried beans is ready.
- Now in another pan/tava add oil,chopped onion,garlic.
- Saute it until you get nice aroma of the jalapenoes.
- Add lime juice immediately add cooked /cooled rice to it.
- Add required salt and mix it thorough.
- Rice is ready too.
- Now we need to the final step - assemble .This you can do just before serving.
- Heat corn tortillas and keep a layer of guacamole,beans,rice.
- Add yogurt and el yucateco on top ,wrap it and serve immediately.
- Enjoy your vegetarian bean burrito with avacado,rice filling..
Note:
- To make Vegetable filling:
- You can make vegetable filling, if you don't have avacados.
- Add lime juice and little spice while sauteying veggies.
- Choice of veggies can be anything like spinach,mushroom,squash,bell pepper etc.
- You can use black bean instead of kidney bean if you have.
- Try to remove jalapneo seeds( spicy seeds).
- You can use flour tortillas instead of corn tortillas.
