Dosa is a fermented crepe made with rice and urad dal as the main ingredients.Everybody know about dosa and its origin , do you ? If you are not aware of the fact it is from southern most Indian state Tamilnadu ,but crispy dosa is originated from karnataka according to wiki .Dosa is famous all over the world and in countries where Tamil people live

Dosa or idli is a daily breakfast/dinner in any south Indian household.It's not like same kind is repeated daily,there are varieties.Simple dosai can vary from kal dosai,uttappam.Stuffed dosa can be masala dosa,vegetable masala dosa etc.There are even healthy dosa like oats dosa,tomato dosa.millet dosai, also kids favorite cheese dosa is available.
I usually grind idli batter not prepare dosai batter separate.This time i wanted to make dosa batter separate with raw rice (but i prefer idli rice.I almost ran out of idli rice, so made dosa batter with only raw rice).You can combine 1 cup idli rice and 1 cup raw rice if both of them are available to you.My intention of this post is to help people who don't have Indian wet grinder and have only raw rice like sona masoori.Dosa Batter can also be grind using blender,but it take more time than regular Indian mixer.
Fermenting makes the dosa crispy and tasty, if you don't have the time to do add some butter milk to fresh ground batter.My mom used to do this very rare ,when we don't have fermented batter.Please note, non fermented Dosa taste and texture is different.

How to make Dosai RecipeCuisine: Indian Category:Breakfast Serve:around 15- 20 Prep time:3 hours+30 minutes Cook time:2 minutes Total Time:4 hours
Ingredients:
- 2 cups raw rice/pacha arisi.
- 1/2 cup urad dal/ulutham parupu.
- few poha or sabudana.
- 2 tbsp chana dal (gives a nice color).
- salt as required.
How to Make Crispy Dosai:
- Soak raw rice,urad dal,poha,chana dal together for 3 hours.
- Grind it to smooth batter using Indian mixer/wet grinder.This will take at least 30 minutes.
- Pour in a vessel/bowl,add required salt and beat it well with your hands.This is to make sure the salt is well mixed with the batter.
- Ferment it overnight and next morning give a stir using round shaped ladle.
- Heat dosa tava, add oil at the bottom.
- If your pan/tava is deep in the middle, first dosa will be curdling.
- Add oil and cover it with a lid.
- Dosai is ready to be served.Serve it with chutney of your choice.
Note:
- Making crispy dosa after flipping will take more time and oil.
- Add 1 cup of idli rice and 1 cup of raw rice ,if idli rice is available to you.
- Grinding can be done in wet grinder,blender or Indian mixer.
- Don't forget to ferment the batter to taste authentic dosai.
