Mexican Red Rice - a spicy rice made with chili powder.I am sure this is not a authentic Mexican recipe and is a product of marriage between masala rice and tomato rice.And i call this Mexican red rice as son of masala and tomato rice.
You can also cook rice in tomato puree and do tempering later.My aim was to use leftover cooked rice ,So we are going to temper the cooked and cooled rice with spices and tomato paste instead of cooking along with spices and tomato sauce.That makes a lot of difference in the texture and taste,i agree.So if you have cooked rice and thinking what to cook for brunch or dinner, try this Mexican rice.Refer rice recipe collection to try more of rice recipe.

You can add black bean /corn to make this Mexican red rice more Mexican.
This Mexican rice is a spicy ,tasty variation to regular tomato rice.You can add jalapenos and cilantro instead of chili powder and coriander leaves.I am thinking.. this addition will make the rice very close to authentic Mexican rice.As i mentioned earlier you can also make this Mexican rice similar to our biryani's,cook the rice in veg or chicken broth along with tomatoes sauce to enhance the flavor further.

How to make Mexican red riceCuisine: Mexican Category:Main course Serve:2-3 Prep time:5 minutes Cook time:5 minutes Total Time:10-15 minutes
Ingredients:
- 2 cup cooked and cooled rice.
- 2 tomatoes pureed(4 tbsp tomato puree).
- 1 tbsp tomato ketchup..
- 1 onion chopped fine.
- 1 handful green peas/fresh or frozen
- 1 tsp red chili powder/milagai thool.
- 1/2 tsp pepper powder(or to taste).
- 2 tsp oil.
- 1 tsp jeera/cumin seeds(optional).
- salt to taste.
- Coriander/cilantro leaves for garnishing.
Method:
- Heat oil in a heavy bottom pan.Add jeera /carom seeds ,let it change color.
- Add finely chopped onions and saute until translucent.
- When the onions are done,add tomato puree.Let the puree cook for 2-3 minutes until the water gets evaporated.
- You can add ketchup,chili powder,salt and pepper to tava.
- Add peas after the masala get a saute.Wait till the peas is cooked.
- Add cooled rice and fry for 2-3 minutes.
- That's it your Mexican rice is done.Add chopped coriander leaves.
- Serve the spicy Mexican rice,hot.
Nice, should have added black beans and corn for little Mexican touch.
