Carrot Halwa or Gajar Halwa a quick Indian dessert .Carrot is called "gajar" in Hindi that's why this halwa is called gajar ka halwa.Halwa is one of the quickest sweet that doesn't require any fancy ingredients.Like this carrot halwa ,made with milk,sugar and carrots as the main ingredients.
Carrot halwa can be made made in microwave,pressure cooker or stove top. I Followed the stove top Method.Traditional version of making gajar halwa is similar to this method but carrots are cooked in lots and lots of milk,which takes more time.I used very less milk thinking that will reduce some fat content also the time.Little sooji/rava is added to halwa to give a little bite and sweetness while eating.You can use khoya or paneer instead of sooji.
People use red Delhi carrots for making carrot halwa.Here there is no such variety available so i used regular carrots instead.Use fresh carrots to make the halwa more tasty.You can increase milk and ghee used ,also cut some sugar according to your likings.
So what was the occasion ?Why i made this halwa ? Previous week Sunday we had a guest.I made a quick brunch with mangalore buns,coconut chutney,vegetable biryani,egg curry,raita and carrot halwa.The entire platter took around 2 hours.Not bad though..

- Soak sooji in milk for 5 minutes.Grate the carrots and keep it ready.
- Heat a pan, add ghee to it.
- When ghee is hot, roast the cashews until brown then remove it and keep it aside .
- In the remaining ghee,add carrots and roast it until the color changes.Be careful not to burn,if unnoticed it can get burnt.
- Add milk along with rava and water to carrots and cook in low fire until the carrots are cooked and milk is seen no more.
- When the carrots are almost cooked, add sugar and cook in low fire for another 5 minutes or until the sugar blends in to carrot.I used brown sugar.That's why halwa is little different in color.
- Finally add already roasted cashews ,cardamom powder and mix in.
- Carrot halwa is ready to be devoured.

Cook time:20-30 minutes Total Time: 40 minutes.
Ingredients:
- 3 1/2 cups grated carrot(4 big carrots ).
- 1 1/2 cups sugar(or as required).
- 10 cashews broken.
- 1/4 cup milk.
- 1/4 cup water(add milk instead to make rich and creamy halwa).
- 1 tsp sooji.
- 1 tsp ghee.
- cardamom powder.
Method:
- Soak sooji in milk for 5 minutes.
- Grate the carrots and keep it ready.
- Heat a pan, add ghee to it.
- When ghee is hot, roast the cashews and keep it aside .
- In the remaining ghee,add carrots and roast until the color changes.
- Add water and milk to carrots and cook in low fire until milk is absorbed.
- When the carrots are almost cooked and there is no trace of milk, add sugar and cook in low fire for another 5 minutes or until the sugar blends in to carrot.
- Finally add cashews ,cardamom powder and mix well.
- Carrot halwa is ready to be devoured.Enjoy you dessert.Kids would sure love this sweet.
