I love making one pot meals.You can make a weekday lunch in no time. Today I made Mint Pulav and Carrot Raitha to go with it. My Hubby and Daughter loved it.
Mint has medicinal properties and is known to aid digestion. In general I try to use greens in our every day diet.
Ingredients:

Ingredients:
- 1/2 Tbsp Garam masala.
- 1 1/4 cups Basmati rice.
- 1/2 Tsp Ginger garlic paste.
- 1 1/2 cup Water
- Salt as required.
To Grind:
- 1 cup Mint/Pudina.
- 1/2 cup Coriander leaves.
- 1 small size Onion.
- 2 green Chilies.
To Temper:.
- 1 Cardamom.
- 2 Cloves.
Method:
- Soak the rice for 20 min and drain the water.
- Chop the onion into medium size pieces.
- Saute the onions.
- Grind the sauted onions with mint ,coriander and green chilies.
- Heat the oil in a Pressure Cooker and add the ginger garlic paste and saute till the raw smell dissipates.
- Add cardamom and cloves and saute for a min
- Add the ground mint paste and saute for a few minutes.
- Add the soaked rice and water.
- Add Salt and Garam masala .
- You can adjust salt and spice levels according to your taste.
- Cook in medium until the steam releases once from the pressure cooker ( 1 Whistle ).
- Mint rice is ready to be served.
- Serve hot with Raitha
