Eggless Oatmeal Cookies|Healthy Cookies

     Egg less oatmeal cookies is a light sugary ,crunchy, healthy cookie with wheat flour.Because of the addition of butter its on high calorie end.You can use eggs instead of milk.You can skip the milk and use water too.Its a healthy cookies because there is a lot of oats in here ,i used wheat flour instead of regular flour to bind the oats.
    Cookies are every body's favourite especially here in US ,even grown kids(adults) love it. This Oatmeal cookie has more cinnamon which makes a heavenly aroma while baking  and gives a nice touch of flavour while eating. For this holiday season this is the best recipe to bake for your kids and for yourself.

     To understand the difference between baking soda and baking powder use this link. The recipe ask for baking soda but I had only baking powder so  used the above link to substitute 1 tsp of baking soda with 2 tsp of baking powder.
    Recently i did this Oatmeal cookies to gift our neighbours they are vegetarians so i tried egg less version and got a chance to picture these Healthy oatmeal cookies again.

Eggless Oatmeal cookies    
 Cuisine: International Category:Desserts Yields:22 medium cookies Prep time:20 minutes Cook time:25 minutes Total time:45 minutes

Ingredients:
  • 3 cups oats/Old fashioned.
  • 1 1/2 cup whole wheat flour.
  • 1/4 cup raisins/Dried grapes.
  • 1 tbsp ground cinnamon/Pattai.
  • 1/2 tsp salt. 
  • 1 tsp vanilla extract/Vanilla essence.
  • 1/4 cup milk(if you use eggs substitute with one egg) or simply use water instead.
  • 2 sticks butter/1 cup butter(room temperature)/Vennai.
  • 1 1/4 packed brown sugar/Sarkarai(see notes).
  • 2 tsp baking powder/1 tsp baking soda.
Method:


  • Crush/grind 1 whole Cinnamon stick fine to get 1 tbsp cinnamon powder.
  • Toast oats in oven for 5 minutes or until it slightly browns.
  • Combine butter and sugar and beat them until creamy (for doing this butter has to be in room temperature)
  • Add Milk and vanilla extract and beat it until all  gets mixed together.
  • In a separate bowl combine whole wheat flour, cinnamon powder,salt ,baking soda.Mix them well.
  • Add Dry ingredients to wet ingredients little by little and mix until they combine well.
  • When they become crumbly stop mixing it .
  • Add toasted oats little by little about a cup at a time.
  • Combine all of them well together.
  • Mine was not so combined.Its OK go ahead spoon them in cookie tray with parchment paper.
  • Preheat the oven to 300 degrees for 8-10 minutes . .
  • Take them out when the sides started to brown at around 25 minutes.
  • You feel like cookies are not cooked enough but when it cools it will be good and crunchy.
  • Egg less oatmeal cookies are ready store it in an airtight container..
  • Enjoy every bite of this oatmeal cookies.

Note:
  • When you cook the cookie for a long time the lower part  may get burnt so have an eye on them. 
  • When you take the cookie out you feel that it is very moist and feels like raw dough ,after it cools down it will become hard so don't worry.
  • If the sugar granules are very large better use powdered sugar.
