Chakli(முறுக்கு )/Murukku recipe/Diwali snack recipes

Murukku is indian snack made of wheat, rice flours and deep fried. My mother do simple thenkulal murukku with rice and urad dal for diwali and my grandma do onion murukku and many different murukku for diwali .As kids we used to enjoy them from the day my mom start preparing diwali recipes ,we used to distribute to all our neighbours and those lovely days are gone .I myself has to prepare murukku if i want :(Insipite of these murukku is my alltime favourite and i often do it at home inspite of other healthy snack recipes like salsa, guacamole, masala peanuts
Its so addictive and i myself cant stop with just one .We can simply munch them when we take one sip of hot tea .. That sounds so intresting right  .Once in a while defenitely i would indulge myself in cravings like this .I usually do murukku with rice flour without any additions like jeera, ajwain .But one time i had a murukku with jeera and ajwain  in my friends house and it was delicious ( a little more oil for me though). So i wanted to do right way .

Preparation time:5 min
Cooking time:1 hour
Yields:50-60 mini chakli

Ingredients:

  • 3 cups rice flour(store bought)
  • 1 tsp chili powder
  • 2 tsp urad dal flour
  • 2 tsp butter
  • 1 tsp ajwain/Ellu
  • 1/2 tsp cumin/Jeera
  • salt as required (i added 1/2 tsp)
  • Oil for frying
  • 2 cups water.
Method:

  • Melt the butter and add it to rice flour.

  • Add salt ,chili powder, ajwain, jeera to rice flour as well.

  • Add water little by little and mix all of them well together.

  • Make a dough without any cracks .

  • By the time heat a saute pan with enough oil for frying the chaklis.

  • When the oil is piping hot start piping the chaklis.

  • If you want round chaklis pipe them in a small plate and flip the plate so that it drops in to the oil(be careful about the oil spill).

  • Fry until they turn little brown or until the frying sound stops.
  • Cool them completly before storing in a airtight container.

    Note:

    •  Adding of ajwain, cumin  is purely optional but adding them will give special flavour and aids digestion.
    • You can add more chili powder if you wish but for kids this propotion is right enough.
    • Oil should be very hot otherwise you will end up in soft murukkus instead of crispy murukkus.
    • After a batch check heat and salt, if its not enough add them to little water and combine them well with the dough .

    2. I know how addicted murukkus can be; once you start, there seem no stopping in munching. I am a big fan of murukkus; usually made only for festive season. Your recipe has been added into my list of KIV to be tried when the need arises.
