Christmas Cake | Instant Cake Recipe | Plum Cake | No Alcohol Cake

     I was searching for Christmas cake recipes to use my tangerines lying on the fridge .After I saw this recipe I could not take my eyes off it  and wanted to try this.When i thought of making the cake,was  little skeptical about the recipe. I reduced the size by half and made it .After making i was really worried why haven't i made a big batch.My dear ones loved it  and the cake was over the very next day.After eating the cake i felt like i was eating i remembered the bakery style plum cake covered in butter paper.

     For making a Christmas cake you don't really need to soak dried fruits in wine,no need of keeping the butter at room temperature,also no wine is necessary for making.You can make them Instant without all the above mentioned fuss and without no fancy ingredients.

      It is really colorful ,nutty,moist and delicious.I really love these cute little buddy goes in to my kids snack box .She is really happy about healthy homemade cake that too her mommy made it for her.You don't really need to add the egg mentioned for the cake to be moist .I have done it many time without egg and it was really super moist.The only thing you need to keep in mind is that you have to add little more water while cooking the dried fruits.Also make sure to cool the mixture before adding the nuts and flour

Step by Step picture recipe for making Plum Cake:
  • Grind the cinnamon,clove along with sugar to fine powder.Chop the nuts ,dates,apricots in to fine pieces .Add sugar,butter,water,raisins,nutmeg,cloves,Cinnamon powder to a deep pan.Add flour,salt,baking powder to a mixing bowl and mix them well together.

  • Cook this syrup for 4 minutes so that the raisins get cooked a bit .Let the butter and sugar gets melted too.Switch off the flame and add chopped nuts to it when the syrup is Luke warm(little warm).Add vanilla essence to the cooled syrup mixture.Add slightly beaten egg mixture to the sugar syrup.Add dry ingredients(flour mixture) to wet ingredients(sugar dried fruit mixture)  and mix them together until there  are no lumps.Add the grated nutmeg if you haven't added already.

  • Preheat the oven to 350 degrees for 6-7 minutes.
  • Grease the pan (I used loaf pan but its not non stick.If u have non-stick pan no need of greasing it)
  • Add the nutty,fruity mixture to the pan which is already greased and bake for 30-35 minutes in 350 degree Fahrenheit or until a tooth pick comes out clean.

  • After cooling. cut in to desired shape/pieces and store in a airtight  container.
  • Best used within 3-4 days when keeping at room temperature.

Ingredients:
  • 3/4 cup all purpose flour.
  • 1/4 cup dates.
  • 1/4 cup craisins.
  • 1/2 cup raisins.
  • 1/4 cup dried apricots.
  • 1/4 cup badam.
  • 1 tsp baking powder(1/2 tsp baking soda).
  • a pinch of salt.
  • 6 cloves/krambu.
  • 1/2 tsp cinnamon powder/pattai.
  • 1/4 tsp nutmeg powder(optional).
  • 1/2 cup Brown sugar.
  • 1 tsp vanilla essence.
  • 1/4 stick butter.
  • 1 egg(optional).
  • 1/2 cup water.
Method:

Note:
  • Addition of orange peel gives a zesty taste( i didn't do it).
  • Adding of nuts or dried fruits is your choice .If you add more fruits and nuts it will be more nutty.Choice can be Raisins,Cranberry,dates,cashew,almonds,apricots,prunes .
  • You can choose cake pan (shape) of your choice .
  • You can also cook this cake in pressure cooker.Mix all the ingredients and add it to pressure cooker pan.In the empty pressure cooker keep the pan .Pressure cook it without whistle. 
  • In case if the cake is not cooked properly.Microwave until its cooked .After cooling cut the cake and keep fresh in an airtight container.
  • Original recipe asks for caramel syrup for making the cake brown .I used brown sugar that will give the cake a nice brown color.
