Cauliflower Soup-Chettinad Style

This past week has been cold, rainy and down right dreary here. I guess it was a perfect time to have a soup for lunch. This soup is very nutritious, it has Veggies Dal and it tastes really good.

This is an easy way to get toddlers to eat their veggies. You can make this soup with any vegetable but we like it with cauliflower. Here is the recipe.

Ingredients:

  • Half Medium sized Cauliflower - florets separated.
  • 1 medium size Onion.
  • 1 small Tomato.
  • 1/4 cup split green gram dal. (cooked and mashed thoroughly).
  • 4 green Chilies.
  • Salt as required.
  • Oil for tempering.

To temper:

  • 1/4 tbsp pepper
  • 1/4 tbsp Cumin seeds.
  • 1 small Bay leaf.
  • 1 inch Clove.

Method:

  • Cook the green gram dal in a pressure cooker for 2 whistles or until it is soft and mash it thoroughly .
  • Cut the cauliflower in to small pieces and clean them by adding it to hot water .
  • Steam them for 5 min (should not be mushy).

  • Cut the onion in to thin slices.
  • Heat a sauce pan and add oil to it .
  • Add items in"to temper " and let the cumin seeds change color.
  • Add onion and green chilies and saute until translucent.
  • Add tomatoes and cook them till they release their juices.

  • Add a little water and let the onions cook well .
  • Add cooked dal and cauliflower and let the soup come to a  boil.
  • Simmer and cook for another 5 minutes.
  • Cauliflower soup is ready to be served.

Note:

  • I actually made this for lunch and had it with rice, so I used more chilies. If you are having this as an appetizer reduce the spice level.
  • If your kids don't like cauliflower just give them the soup with grated cheese.

  2. We like it with caulis too. Caulis are reasonably priced over here and does not contain much taste. But when added into a flavorful soup like the one you made, its such a wonder. I am not a big fan of soups but my other half is. The weather over here is also freaking cold and I shall make for him one of these days.
