Aloo paratha is everybody's favorite ,isn't it ?Mine too.
There are two instances ,how i started liking this Aloo paratha?
First one is: When i stayed in hostel, my pals from Punjab make aloo paratha.Even though they are younger to me ,they make these parathas and i eat them hehe..
Second one is :While we stay at Bangalore we usually go to a Singh dhabha near by every week.They serve perfect aloo paratha and serve it with plain yogurt .When i hear itself my mind is now where here.
Even though my hostel friends add onions to their paratha's ,I haven't added in this version .You can very well do so if you love onion flavor in paratha.In that case chop the onions fine and add it .

Ingredients
Stuffing:
- 3 small size potatoes
- 10 mint leaves
- 5 coriander strand
- few cumin seeds/jeera
- 1/4 tsp chili powder
- little coriander powder(optional)
- salt as required
- little turmeric
- Small onion (optional)
- 2 1/2 cup wholewheat flour
- Salt as required
- water for kneading the dough
Method:
Outer layer:
- Knead the wheat flour with salt and required water.
- This should be done at least 3 hours before paratha making.This way parathas will be very soft without adding oil/milk/Banana/Hot water.
- Pressure cook the potatoes for 3 whistles or until soft .
- Mash them very well to a fine paste.
- Wash coriander and mint leaves thorough.
- Chop them very fine .If you are using onions, chop them fine too .
- Mix potatoes ,chili powder,coriander powder,turmeric,jeera,onions ,mint and coriander leaves.
- Mix them and separate these stuffing's in to 6 equal sized balls.
Making parathas:
- In a wide deep bowl place atta for dusting.
- Divide the kneaded wheat flour dough to 6 equal portions.
- Roll them using rolling pin in to small circle.
- Place one portion of stuffing inside .
- Fold it tight and close every side .
- Shape this stuffed dough in to circle .
- Dust it with wheat flour and roll them in to little thick circles.
- Heat tava, while its very hot add rolled parathas to it .
- When one side changes color flip them .
- When the paratha bubbles turn it again and add oil to both the sides.
- When both sides have brown spots take it out of the tava.
- Repeat the process for 5 remaining parathas .
- Serve it with plain raitha or raitha of your choice.
