Whole Wheat | No Knead Bread

          Whole Wheat Bread -Consider a house(in metropilitan or small town) on a weekday morning....grab a bread,toast it (may be not),put something in (jam ,peanut butter,cheese,egg omelet, grab a patty/cutlet -heat it ,may be not ) eat it, may be not.. in a hurry.In some house there is no breakfast !!! just easy,right.Reality is we are going to need lot of energy for the entire day ,after having a long break. To give ourselves a peace of life here comes our no knead bread ...No much work ,but you are going to praise yourself at those busy mornings.Yeah!!!

        We are not going to knead the bread ,but we are going to rest the bread for 8-9 hours .This amount of time is much needed for yeast ,so it can do its work and form gluten in the dough.This whole wheat bread its going to be little chewy unlike our regular whole wheat bread.I sometimes knead the bread after the first rise ,which make the bread rise evenly and cook perfectly(according to me, i am no scientist in bread making).Got this idea from priya's versatile recipe.

Ingredients:
  • 3 cups wheatflour
  • 1 tsp yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/4 cup oil(or 2 tbsp)
  • 1 3/4 cup water(or as needed)
  • 1 tsp sesame seeds.
  • 1 tsp fenugreek leaves(dried)/kasuri methi (optional).
How to make Whole wheat no knead bread:
  • Add whole wheat flour,salt,sugar,sesame seeds,fenugreek leaves,yeast,oil to a large bowl.

  • Mix it gently.Add water and give a quick stir.
  • Mix gently to form a dough(little loose than chapathi/roti dough).
  • Rest the dough in warm place covered for 8-9 hours or overnight.

  • Knead by adding little flour at a time until you form a elastic dough this can be reached in 10 minutes.
  • The above step is completely optional.Grease the loaf pan with enough oil and keep the dough in.

  • Smooth it out gently on the top and give a cut like a cross on the top.

  • Add in more sesame seeds on top or some roasted oats.
  • Cover it with a cloth and let it rise.(this took me 2 hours)
  • Preheat the oven to 350 degrees for 10 minutes.
  • Keep the loaf pan in middle rack and bake it for 40-45 minutes or until the sides are dark brown.

  • Cool in wire rack (Keeping in wire rack makes the bread not to go soft).
  • Slice and store the whole wheat no knead bread in airtight container.This bread when stored clean can be stored for up to 5 days in 70 degree farenheit.
