Chole Bhature Recipe | Aloo Bhatura

       Chole Bhature - a famous Punjabi flat bread made with maida/all purpose flour.Always deep fried in oil to get puffy,soft bature.Bhatures are often served with chole ,a curry made of chickpeas cooked along with Indian spices.Hence chole-bhature is an inseparable combination.

     Chole bature's are not only famous in Punjab,but all over India or you can say world wide.This is the first time i am trying my hands on bhatures.I used north Indian famous cook tarladalal ji recipe.She made the bature's with potato.So i call bhature as aloo bhatura.These aloo bhatura is so filling in a way that we skipped our lunch on Saturday.
     Chole bhatures can be relished hot along with white chickpeas masala/curry.
Why this chole bhatura?
     This aloo bhatura can be eaten when cold too,it is not going to become rubbery also there is no cooking soda or baking powder.I still want to do batura with wheat flour,if i do it then i will share it with you all.In this post i am going to explain only bhature recipe.

Tips:
For making Dough:
  • If you are not able to make a dough with the mentioned amount of oil,add little more oil.
  • It take at least 10 minutes to make the dough soft and ready.
While frying:
  • Fry the bature in medium high heat of oil.
  • If the flame is too low you result in fried naan.If its too high you end up in maida poori(Very crispy).
  • Press the bhatura gently after it rises ,to get a puffy chole bature.
  • Puffy ones taste better than non-puffed ones.

 Cuisine: Indian  Category:Breakfast/Brunch  Serves:3 minutes(around 10 batura)    Prep time:25 minutes Cook time:2-3 minutes(each)Total Time:1 hour


Ingredients:
  • 1 1/4 cup all purpose flour
  • 1 1/4 cup steamed/cooked potatoes(2 potatoes pressure cooked and grated)
  • salt as required
  • 1  tsp oil.(if you are not able to make dough add more oil).
How to Make Aloo Chole Bhature :
  • Pressure cook potatoes until soft and mushy.
  • Grate potatoes after removing the peels.

  • Add the grated potatoes to all purpose flour.

  • Add required salt and 1tsp oil to flour.

  • Mix it to form a soft dough.

  • You have to work hard to make it to soft dough.The dough should bounce back ,if you touch it with your fingers.
  • Leave the bhature dough covered with kitchen towel for 10 minutes.

  • Separate the dough in to 10 equal sized balls .
  • Roll it to form a circular or any shape as you like.Use oil or flour to dust in between.
  • Heat oil in high flame(when the oil is hot,reduce the flame)and deep fry.
  • Turn and cook it until oil oozing stops.

  • Delicious aloo/chole bhature is ready to be served.We enjoyed it with black chickpeas/chole curry.
