Masala Rice a quick fix recipe with the leftover rice.This rice is very popular among bachelors and college grads because they can't make a fresh meal for dinner.This sure can make a fresh,comfortable meal with the leftovers available.
When ever i am not in the mood to cook but have some leftover rice, i will quickly make this rice and phew !!! tummy is full and at the same time i never feel i am eating the leftovers..You can use the leftover rice to make tamarind or lemon rice too,but i prefer making masala rice, when i am craving for some spicy food...In under 10 minutes convert your rice to a whole meal.There are so many options to garnish this rice its upon your imagination.Few topping ideas chips,sev ,plain yogurt,papad etc..
For the spice: I have used sambar powder,but you can very well use curry masala powders available in big chain stores like walmart,Costco etc or some chili powder and coriander powder is well and good.Also any type of rice that is not mushy can be used for making this masala rice.I have added some veggies to give a crunch and some extra flavors.But you can make it without veggies too.
You can also do mint puloa,coconut rice or curd rice with the leftover rice.

Ingredients:
- 2 cups leftover rice.
- 2 tsp sambar powder(replace with chili and coriander powder or curry powder).
- 1 tbsp ginger garlic paste.
- 1/4 cup carrots[optional].
- 1/4 cup peas[optional].
- 1/4 cup cabbage[optional].
- 1 onion.
- 1 tomato.
- water and required salt.
- few curry leaves/karuvepilai/kadi patta.
- few mustard seeds/kadugu.
- 2 tsp peanuts/kadalai.
- 2 tbsp oil.
- 1 red/green chili/mirch.
- If you are using fresh made rice then cool it down(this step is to ensure not to loose the flavors of masala and salt,this will happen when the rice is sticky).What ever variety rice you are making make sure you cool the rice.
- Chop vegetables,onion and tomato and ginger garlic paste.
- Now you are all set.
- Keep a tava with 1-2 tbsp oil.
- Add mustard seeds, allow it to splutter.
- add peanuts and give it a stir until it turns brown.If you don't have peanuts add urad dal or chana dal.
- Add curry leaves and chili and saute it.
- Now add onion and saute it for a minute.
- Add ginger garlic paste, saute onions until it turns translucent.
- When the onions are cooked add tomatoes, cook it through.
- Add the chopped veggies, saute for 2 minutes along with some salt(they get cooked fast if you add salt).
- Add spices,turmeric and masala powder.Give a quick stir.
- Add 1/4 cup of water,required salt as well.
- Let the liquid come to boil and get reduced it takes 2-3 minutes.Now half the water has been evaporated.
- Finally add rice and stir it in.Mix really well so the masala coat the rice.
- If you have coriander leaves garnish.
- Masala rice is ready.Serve it with plain raita or onion raita or some chips.
