Vanilla Sponge Cake | Birthday Cake | Easy Cake Recipe

        Vanilla sponge cake a simple cake from the scratch with less calories(eggs) but is so fluffy and soft  also with less sugar.This cake can be used as a birthday cake with vanilla frosting or any frosting.If you are serving the cake as is ,add some confectionery sugar on top.

  So what is a sponge cake? It is a cake made with flour,eggs and sugar.A very basic cake with a firm but well aerated texture just like sea sponge.They are the first set of cakes baked without yeast.
        Last week for a get together/Friends meet everybody was bringing some snack.Kids would love cake so i made this  quick and easy cake.Every sponge cake in google search has got minimum of 6 eggs,eating a cake with eggs is not a problem for me but it seemed like too much of eggs.So i decided to cut down the number of eggs added ,but added similar wet ingredients to give the cake a spongy texture.I baked the cake from scratch with less eggs and attained the texture as well.This cake can be eaten as  a tea time snack/cake.

  Tips to get the Sponge cake perfect :
  • Every ingredient should be at room temperature.
  • Beat the wet ingredients (each one of them) well before adding the next one.
  • While mixing the dry ingredients to wet ingredients gently fold in do not over mix.
  • Preheat the oven at least for 5 minutes.
  • Cool the cake completely before cutting.

Step by step pictures of how to make sponge cake:
  • Sift the all purpose flour,baking soda,baking powder together.Also flour the baking pan and Preheat the oven to 350 degrees.

  • Cream the butter then add sugar beat very well.Add egg and beat it again until its well combined.

  • Add milk,oil,vanilla essence ,water,lemon juice- one at a time and beat well.Now the wet ingredients mixture is ready.

  • Fold in the dry ingredients to wet ingredients using a spoon or spatula.If the cake batter seems to be too dry add few tbsp of water to make it little wet.Add the batter to cake pan and bake for 20 -25 minutes or until the tooth pick pricked in center comes out clean.
  • I added cashews or on top for garnish.But it all came after cutting.

  • Cool and cut the cake in to desired shape.

Ingredients:
  • 1 3/4 cup all purpose flour
  • 3/4 cup sugar
  • 1 tsp Baking powder.
  • 1 tsp-baking soda.
  • 1 tbsp corn starch.
  • pinch of salt
  • butter-3 tbsp.
  • milk 1/2 cup.
  • water 1/2 cup+ 3-4 tbsp 
  • lemon juice-1 tbsp
  • vanilla essence-1 tsp
  • oil - 1/4 cup
  • eggs-1
Method:

  • Add milk,oil,water one by one and beat well.
  • Add vanilla essence and keep the wet ingredients ready.

  • Fold in the dry ingredients to wet ingredients using spoon or spatula.
  • Add the batter to cake pan and bake for 20 -25 minutes or until the tooth pick pricked in center comes out clean.
  • Add cashews or almonds on top for garnish.
  • Cool and cut to desired shape.
  • Vanilla sponge cake is ready to enjoy.
