Spinach one of the largest used greens in northern part of India.Called 'palak' in Hindi and 'pasalai keerai' in Tamil.Palak puri is a slight variation to regular poori.
Greens are considered to be good in Iron,betacarotene.Adding to the above spinach is a good source of potassium ,magnesium,calcium ,sodium.I love spinach in dal,kootu,poriyal ,paratha or even with paneer and aloo.Toddlers don't know the importance of this green and they hate it.Not only this especially but any green variety.But they are fond of colors so we can grind and include vegetables to make theri meal a healthy one with required nutrients.for ex:Grind beets,spinach to make pink, green dosa or pink , green chapathi/puri.Making of poori is not so a healthy way but a good alternative to sneak some nutrients to our poor eaters. Also if you are getting bored of regular poori then make this green variety and enjoy.

- Choose dark green ones which are not yellowish.
- There should not be any spoilage /water content.if there is any then choose a different one.
- Wash the spinach 2-3 times and clean the stems if any. Add 1/4 cup of water and cook the leaves until tender.Blanching is fine too.
- Cool and grind to a smooth paste ,along with 1 green chili.Add wheat flour to a deep bowl ,add pureed palak,salt,jeera,hing,turmeric as well.
- Mix to form a crumbly mixture, add water little by little to make a tight and soft dough.Separate a small portion of dough.Make it to a ball.Flatten it.Dust with flour or oil and roll in to thin disc.
- Heat oil .when the oil is hot enough (put a small pinch of dough it will come right up the top) slide in oil.When it puffs up keep pressing the poori. Flip and cook until completely cooked.Drain in paper towel and serve.

- 2 1/2 cups wheat flour/kothumai maavu.
- 1/2 tsp jeera/jeeragam.
- 1 green chili/pachai milagai
- 1 cup packed spinach/palak
- little hing
- salt as required.
- half to 3/4 cup of water.
- Wash the spinach 2-3 times and clean the stems if any.
- Add 1/4 cup of water and cook the leaves until tender.Blanching is fine.
- Cool and grind the leaves to a smooth paste ,along with 1 green chili.
- Add wheat flour to a deep bowl ,add pureed palak,salt,jeera,hing,turmeric as well.
- Mix to form a crumbly mixture, add water little by little to make to a tight and soft dough.
- Separate a small portion of dough.Make it to a ball.Flatten it.
- Dust it with flour/ oil and roll in to thin disc.
- Heat oil and fry the poori.When its getting cooked ,press to get a puff.
- Flip and cook until completely cooked.
- Drain in paper towel and serve.
- Palak puri is ready. Serve with curry of your choice.
