Crunchy Maida Seedai Recipe | Easy Seedai Recipe

       Seedai is a snack made with rice flour and is famous or more consumed in southern part of India ..Maida seedai is made with all purpose flour instead of rice flour.It is more crunchy than previous ones.Now a days commercially available seedai are all made of maida, because of the crunchy and more tasty outcome.

     Seedai can be savory or sweet and flour used can vary from  rice flour,rava,maida and for savory version of it coconut milk is added for taste and texture.Traditional method of preparation is different from using rice flour and is to soak rice and grind rice to smooth paste.Excess water is drained,made into equal size balls and then deep fried.
     What so special about this version ? Remember in my previous post,... There was a long note of how you can avoid bursting? Maida seedai will never burst .So don't care anymore  about it and start making these tasty beauties for your snack.

      I always make aval murukku,ragi murukku,dal murukku for krisha jayanthi.I made this maida seedai for this Krishna jayanthi along with vella aval/sweet aval .It was late in the evening so couldn't take any picture.My dear's finished it off before dawn of the next day, again  missed taking picture !!! I thought of sharing it at least for the upcoming Diwali .Made them again and clicked for sharing with mykitchenodyssey readers.

Step by Step picture recipe for making maida seedai:
  • Steam all purpose flour (tied in cloth)  idli pot for 10 minutes.Take out the cloth carefully and transfer it to a bowl deep enough to mix.Add ghee .salt,sesame seeds to the flour.Add coconut milk to flour little by little(all purpose flour takes very less water) and mix to form a thick smooth dough.

  • Make small and smooth roundels of equal size and keep in white clean cloth or paper.Heat oil .When the oil is hot,add around 15-20 balls( depends on the oil capacity) and deep fry until golden brown.Make sure to turn them every few seconds to get even frying and even color.
  • When they are golden brown drain the excess oil in paper towel.After cooling store in an airtight container.

  • 1 tsp sesame seeds/ellu.
  • 1 tsp ghee/butter.
  • 1/2 cup coconut milk.
