Laddu's are everybody favourite.Recent Diwali's like for past 10 years my mom makes this Boondi Ladoo for Diwali .It is just mouth watering and so good .
I asked her about boondi ladoo's couple of days ago ,with her explanation i just want to try it for sure .I made a very small batch and it was perfect and yummy .I used less sugar than mithai shops ladoos.

Some tips for getting perfect ladoos:
- After we deep fry the besan through holed laddle it is called "boondi ".You get lot of bubbles while doing soWhen the bubbles subside it is the right time to take boondi's out .
- Don't under cook the boondis , you get a raw smell in ladoo's .
- If you overcook then boondi's don't absorb the sugar syrup.And also press the boondi's in sugar syrup ,this way boondi absorbs sugar syrup well .
- When you feel that sugar is getting crystallised try adding some lemon juice after you get the single thread consistency (or pisuku padham).
- You can very well omit the colour added ,but adding of colour give a appealing look to ladoo's.
- While adding water to besan be careful not to add too much water .Then you don't get proper boondi shapes .
- You don't have laddle to make boondi's ?Don't worry i did it with colander having circle holes in the centre.
- My mom asked me to use pacha karpooram(edible camphor ) which i don't have .If you have it just add little bit of it in sugar syrup otherwise fine too.

Ingredients:
- 1/2 cup besan/kadala mavu
- 1/4 cup+1 tbsp water
- Pinch of salt /Uppu
- Pinch of lemon yellow colour(edible)
- 1/2 tsp ghee/nei
- 3 badam/cashews
- few dried grapes/Kismis
Sugar syrup:
- 1/ 2 cup sugar/Sarkarai
- 1/4 cup water
- 1 cardamom/Elakai
- 1 clove/Krambu
Method:
For sugar syrup:
- Mix sugar and water together and place it in stove.
- When it reaches single thread consistency or pisuku padham switch off the stove .
- Add powdered cardamom,clove to it .
To Make boondi's:
- Mix besan with water until thin( bhaji batter consistency).
- Mix lime color with little water.Now add this to besan batter.
- Heat oil in pan .
- Through the colander pour besan batter and press them by making circles in colander (you have to do like making dosa).
- After the large bubbles in the oil subsides take boondi's out and drain them in paper towel.
- Repeat the process for remaining batter as well.
To make ladoos:
- Add boondi's to sugar syrup while it is hot and press it .
- By doing this boondi's will absorb sugar syrup .
- When the whole batch is done add the fried badam and grapes.
- Roll them to form a ball (you have to really press them well).
- Ladoos are ready .
- Store it in an airtight container .
