Kesari is the easiest sweet that can be made at home when we were kids. Other sweet needs a lot of work some sweets needs purifying the jaggery some require grating while some other require rolling or at least you have to buy something from store if you don't have much work involved in doing the sweet .But this kesari can be made with ingredients that is easily available home (rava and sugar )and it takes only 20-25 minutes of your time .I added colour to this kesari to please the guest (usually i don't add it ).If you are kind of person who like only natural ingredients you can very well omit the colour part and make it white colour .
Today is our nations 68 th independence day and i want to present you a colourful kesari instead of white kesari .I usually don't buy colour's as i said earlier but this time i got few colours to use for some special occasion . I added tutti fruity as a green layer of the flag.This definitely is a party pleaser for sure and get you a good recognition.

Ingredients:
- 1 1/2 cups rava(semolina)
- 1 1/2 cups sugar
- 3 3/4 cup water.
- 6 tsp ghee
- 4 tbsp oil( i used corn oil)
- a big pinch of food colour (optional)
- 10 badam/cashews(chopped)
- 15 dried grapes
- Roast the rava in 2 tbsp of oil .First add oil to hot tava then add rava to it and roast until the rava aroma comes (takes around 6-7 minutes).
- Place the roasted rava in another bowl .
- In another pan add ghee .When the ghee melts add chopped badam and grapes .
- When grapes changes colour and puffs up switch off the flame.
- Add 3 3/4 of water to it let the water boil well .
- Mix the food colour to little water .
- Add this food colour to boiling water .
- Then add roasted rava with one hand and stir the water in another hand .
- You get bubbles when the rava absorbs water .
- Add remaining 2 tbsp of oil to it .
- When rava absorbs all the water add 1 1/2 cup sugar to it .
- Sugar starts to dissolve and the rava gets little watery .
- Wait for it to become little thick .
- Switch off the flame .Add roasted nuts and dried fruits to it along with the ghee.
- Mix all of them well together.
Note:
- Roast the rava well (don't over roast or under roast it ).
- Add rava to super boiling water otherwise you get lumps.
- Adding of food colour is optional .If you are adding the colour add it while the water is boiling itself otherwise it will be difficult for you to get a even colour.
- When you get lumps while stirring,smash it very well . Lumps in kesari will ruin its taste.
