Eggless Coconut Cookies Recipe | Easy Cookie For Kids

    Coconut cookies - a simple crunchy cookies made with the ingredients in your pantry.Dessicated coconut adds a mild coconut flavor to the cookies and the butter makes it just melt in mouth.

    Adding fresh coconut didn't give that much of flavor when i tried for the first time. I want to make some cookies for the holiday season to share with friends that time i  remembered a box of dessicated coconut lying unattended.While searching for the recipe, i found this one more easy and with less ingredients.. especially the most common ingredients available at any home.

     Actually i made in two batches of 1 cup measurement .I made them mini which can be served for a kids party.Any kid won't waste this small cutie.I baked one set in just an hour and the second set the next day.When ever you bake just remember don't make the butter melt while shaping.Be quick and just put in oven.
       I felt i could have added little less butter and more coconut than mentioned.I pre heated the oven for sometime and my baking sheet was thin so baking was done in just under 8 minutes.So be sure to check after 8 minutes otherwise you will burn the bottom.In case if you burn the bottom ,you can shave it in vegetable grater to remove the burnt bottom.

Step by step picture recipe for making eggless coconut cookies:
  • Mix butter and confectionery sugar together.For this the butter has to be at room temperature.Mix vanilla essence to butter and give one more pulse.

  • Sift flour,baking soda and baking powder in a sieve to remove lumps in the flour and even mix of baking soda and baking powder to the flour.Add dessicated coconut to mixer and make it to fine pieces.

  • Now add this fine pieces to butter mixture and give a pulse.Finally add the dry ingredients little by little to stop the flour all over the flour.

  • If the dough doesn't come together, add milk 1 tbsp at a time and mix well.When the dough comes together keep it in refrigerator.After an hour take it out and shape it to mini cookies.
  • Bake in 350 degree preheated oven for 8-10 minutes.Check the oven after this time .It sure seems like they are soft but after cooling it will get a perfect texture.

Ingredients:
  • 1 cup all purpose flour/maida.
  • 1 stick butter(1/2 cup).
  • few drops of vanilla essence.
  • 1/2 tsp baking powder.
  • 1/2 tsp baking soda.
  • 1/2 cup dry coconut.
  • 1 cup confectioners sugar.
  • Milk to make the dough come together.
Method:

  • After an hour take it out and shape it to mini cookies.
  • Bake in 350 degree preheated oven for 8-10 minutes.Check after this time whether they are cooked.It sure look like they are soft but after cooling it will get a perfect texture.
