PeanutButterCookies/SimplePeanutButterRecipe

              Made some peanut butter which i was thinking of doing it for  a very Loooong time .My little one likes peanut butter a lot like her mother .She used to eat peanut butter as is.To enjoy the peanut butter flavour more i did these cookies .Believe it or not it was exactly like Britannia cashew cookies ,if i have added some cashews then its exactly that cookie .hmm So So yummy and we thoroughly enjoyed it a lot .Even though it was little high in calories we ate little less than our daughter  did.If you are looking for a soft and flaky cookies this is the one.Enjoy making it for your loved ones and don't forget to write back to me

Yields:24-28 Medium size cookies

Ingredients:
  • 1/2 cup peanut butter
  • 1/3 cup of butter
  • pinch of salt
  • 1 1/4 cup flour(all purpose)
  • 1 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla essence
  • 1 egg at room temperature
Method:

  • Combine butter and sugar together to form a crumble.
  • Combine egg and beat well .
  • Combine peanut butter and vanilla essence also .Mix them well together.

  • Add flour,salt ,baking powder together in another bowl.
  • Combine the flour mixture to peanut mixture little by little using hand blender(so that it mixes evenly).
  • Add little water at the end if you find the mixture is too dry .
  • Separate them in equal sizes.
  • Roll them in to a ball .
  • Line a baking tray with cookie sheet .
  • Press the balls using fork in a cookie sheet.
  • (My Cookies are uneven because my little girl was helping me )

  • Bake at 375 degrees for 8 minutes in preheated oven of 10 minutes.
  • Cool it down and store in an airtight container .







Note:
  • You can replace flour with whole wheat flour .
  • Adding of eggs gives the cookie some moisture so try to add it .
  • You can reduce the butter levels well ,but to enjoy the flavour i suggest adding the exact amount mentioned here .
  • Oven temperature and cookie texture may depend on the ingredients you use .
