I got a whole Kilogram of strawberrys ,so i want to use it in my cake .I blended them and started making cake and the outcome was so flavourful and so aromatic cake.One of our friend visited our house ,i served them this and the little boy liked it so much .My friend asked me to share the recipe.I was all flying in the clouds :P
This cake has less sugar ,if you have a sweet tooth(sugar lover) you can add more sugar .You can make it as a cupcake and add your favourite topping(frosting) .This cake can be made for birthdays and fill some strawberry topping(frosting) on top ,thats all you wanted for a wonderful birthday .If you want some other cake flavor like berry,banana simply substitute the strawberry with the fruit you wish.

Ingredients:
- 2 1/2 cups all purpose flour.
- 1 tsp vanilla essence
- pinch of salt
- 2 1/2 tsp baking powder.
- 2 eggs
- 1/4 cup butter (room temperature).
- 1 1/4 cup brown sugar .
- 1 3/4 blended strawberries(around 15 medium straberries)
- Keep egg and butter in room temperature(atleast for 2 hours at temperatures like 65 -70 degrees) .
- Cream the butter and sugar .
- Add one egg at a time and blend it until fluffy.
- Add vanilla essence and blend well.
- In a seperate bowl add flour,salt,baking powder and mix well.
- Add 1/3 flour mixture and 1/3 of strawberry mixture and blend it well.
- Repeat adding the flour and strawberry mixture 2 times.
- Grease a baking pan and bake this mixture for 40minutes in 375 degrees for 35-40 min or until a tooth pick comes out clean .
- Serve it with your favourite topping(frosting).
Note:
- If the cake is so dense you can add little water while mixing.
- You can keep it in fridge for 2-3 days (after that it will become dry and there will be no sugar in the cake).
- When you keep it in fridge while serving just microwave it for 20-30 seconds .the cake will be soft and wonderful .
- This has less sugar so you can add little more sugar or simple top it with your favourite topping(frosting).
