Soups are really easy to make and are healthy with vegetables, fresh herbs, pepper, ginger etc.These ingredients are enough to take out your cold symptoms or fever.Pepper powder will make the digestion faster.
Also if you didn't suffer any, this will help you On those chilly nights.When you come home with a severe wind chills you might need some warm beverage like coffee,tea to get back to normal temperature. I like to take some hot sip of cauliflower soup,spinach soup with some croutons on top.What is your favorite beverage?
Here in US, Soups are often made with chicken stock or vegetable stock to give a more depth of flavor.Usually in any Indian home, these stocks won't be available. Keeping this in mind, I made the recipe simple and from scratch without any stock.In case if you want to use any stock you should add after the vegetables are cooked enough.
There is no hard and fast rules in making this soup.I followed a procedure to share the perfect recipe with all of you. It will be helpful for me when i do it next time.Keep this in mind Adding coriander leaves made the soup taste like regular curry. I advice you not to add coriander leaves If you are not adding milk or any cream.In case if you added you can add some milk to make the soup taste different. Step by step picture recipe for making Roasted carrot soup recipe:
- Wash and peel the carrot and chop half of them into 2-inch pieces(this is for roasting).Chop remaining carrot and potato to cubes.Peel garlic and ginger and keep it ready.Add remaining oil to tava.When it's hot add ginger and garlic cloves.
- Roast in oven along with 1 tsp olive oil and salt for 15 minutes or until well roasted.
- Now in the pan .Add chopped onion and saute till it turns translucent.Then add carrot, potatoes and cook until their original color is changed.
- Add fresh herbs to tava and switch off the flame.
- Cool and blend all of the vegetables including the roasted ones with warm water from the roasted pot.Add ground ingredients to tava and Keep in a low flame until it becomes hot.
- Add required salt and pepper.
- Add croutons on top and add some milk while serving.

- 8 carrots.
- 1 potato.
- 2 garlic cloves/poondu.
- 2-inch ginger piece/inji.
- small onion.
- 2 tsp oil (1 tsp Olive+ 1 tsp regular oil).
- required salt.
- 1/2 tsp pepper powder(or as required).
- coriander leaves or any fresh herbs for garnishing.
- while serving add a little milk.Make it vegan without milk.
Method:
