Green gram dal and purple cabbage burrito

In my fridge you will always find corn tortillas. I use them to make tacos and burritos. I make veggie burritos by stuffing tortillas with fresh grilled veggies and black beans. Its a quick and healthy week day dinner.
I had some sprouted green gram dal left over and I used them instead of black beans in the burrito. It came out well. I wanted to share the recipe with you all..


Preparation time:5 min
Cooking time:10 min
Serves:1-2

Ingredients:
  • 6  Corn tortillas(Corn flour Chappathis)you get this at mexican stores or walmart.
  • 5 leaflets purple cabbage
  • 1/2 cup sprouted green gram dal.
  • 1/2 jalapeno pepper(sliced thinly).
  • 1/2 tbsp orange zest.
  • 1 tbsp lemon juice.
  • 3 cheese slices (optional)
  • Salt as needed.
  • Oil for saute.

Method:

  • Cook the green gram dal until soft.
  • I usually cook my lentils in a pressure cooker for one whistle.
  • Finely chop the cabbage.
  • Heat oil in a saute pan.
  • Add the Cabbage,pepper saute it  until its cooked ,usually takes 5 mins.

  • Add the cooked Green gram dal and salt.

  • Cook until the dal blends with the cabbage.
  • Add the orange zest and saute for a minute.

  • Switch the flame off  and add the lemon juice .
  • Reheat the tortillas on both sides for 1 -2 minutes until it bubbles with little oil.

  • Add the cheese slices to the tortillas on one side.
  • Add the veggie dal mixture to the tortillas on the other side.
  • Fold the tortilla in half and cook till the cheese melts.
  • Green gram Burrito is ready to be served.

Note
  • When you feel the burrito is dry add some curd /mayonnaise.
  • I added very little jalpeno pepper for my kid.Feel free to add more for adults or add some hot sauce
