Easy mexican recipes/Pineapple salsa/Pineapple juice

Pineapple is a wonderful fruit with an amazing sweet and sour taste. We eat our pineapple as  is or with little chili powder and salt. I have always felt that adding salt and a little chili powder brightens the taste of the pineapple.

Pineapple is a tropical fruit and I have read that Mexico is the largest producer of pineapple.
I love mexican food. We live close to a hispanic neighbourhood and the mexican cusine here is amazing. We are lucky to have a bunch of good hispanics restaurants and grocery stores here. The other day I brought a whole pineapple and half of it was left over. I had this idea of making a pineapple salsa. Salsa is versatile condiment you can use it as a dip or as a topping for main courses or just as a side dish. Enjoy this yummy pinepple salsa.

PineApple Salsa

Preparation time:10 min
Serves:2






Ingredients:

  • 2 inch Pineapple slice.
  • 1 small Onion.
  • 1 small green bell pepper
  • 1/2 Jalapeno pepper/green chili (just for taste)
  • Half Lemon(Juice).
  • salt as required.
  • Cilantro leaves for garnishing.

Method:

  • Clean the pineapples slice and cut in to 1/2 inch pieces.
  • Remove the core which is hard.
  • Cut the peppers and onions fine.
  • Toss pineapple,green pepper,jalapeno pepper and onions together.


  • Add lime juice and salt before serving.

  • Enjoy it with chips of your choice.
  • We enjoyed it with tortilla chips.  
Note:
  • Always add lime juice and salt before serving
  • You can add red peppers or yellow peppers as well



Pineapple Orange juice:




Preparation time:5 min
Serves:2

Ingredients:
  • 1 cup orange juice
  • 1 inch pineapple slice

Method:

  • Clean the pineapple and cut in to small cubes.
  • Blend in mixer with orange juice.
  • Filter the juice and serve it cold.



Note:

  • We enjoyed it without filtering the juice 
  • Make the juice just before serving or after you make the juice chill it in fridge.

  2. I love anything with pineapples. Over here, the fruit is found all year around and within an affordable price. The salsa is punchy and perfect for beriyani rice. And not to forget the juice too.
