Ama Vadai is a common snack item you can find on roadside shops in TamilNadu along with Uruddal vadai /Medhu vadai. These vada's combine very well with red chutney/milagai thuvayal or coconut chutney.
During my recent visit to india I had bajji's and some of these vada's. I was thinking and craving these vada's after I came back here. I did know how to make them but I had never made them even once. I got some tips from my mom and made a batch of these Vadas. My little one loved it very much and she had a few.
This is healthy and quite easy to prepare snack on a Sunday evening or even on a weekday.

Ingredients :
- 1 cup Channa Dal
- 5 red chilies/Milagai vathal/Vara milagai
- 1 tbsp fennel seeds/Sombu
- 1 handful red onions/Shallots /Chinna vengayam
- 1 small ginger piece.
- Handful Chopped coriander leaves
- Handful chopped Curry leaves
Method:
- Soak Channa Dal for 2 hours .
- Crush red chilies,ginger and fennel and add soaked Channa Dal and grind to grainier (coarse) consistency .
- Add chopped red onions,coriander leaves,curry leaves,Required salt and mix them all together.
- Divide them to 20 -22 small balls and flatten them.
- Heat oil in kadai .When its hot enough add the flattened balls.
- Flip them when one side is done .
- When the vada is brown take it out and squeeze out the extra oil using kitchen towels.
- Serve it with chutney of your choice.
Note:
- Check the Vada's for salt after getting the first batch out .Veda will taste good with exact amount of salt .
- Don't grind Dal to smooth paste,you will feel like having adai dosa if you do so .
- Vada should be brown when you take it out (it will take around 6 minutes for a batch ).
- Don't overcook the Vada's .You feel the burnt texture when its overcooked.
