              Seedai- a crispy,deep fried snack made with rice flour,roasted gram flour as the main ingredients.There are different seedai,like maida seedai,inippu seedai,uppu seedai.My grand ma is an expert in making seedai.The seedai she makes are perfect crunchy with perfect colour.We used to munch them for breakfast,lunch and dinner.I can't match hers in crunchiness but tried up to my level.Grand ma used to grind the rice but i made seedai with store bought rice flour(not to take risk hehehe).You can prepare your own rice flour,See my idiyappam post to make rice flour at home.

          Seedai are considered to be dangerous snack(some body might have experienced it).Rarely it happens to me, because of the tips given by grand ma and my mom.Detailed note of the tips at the end of this post.

        Make small and even size balls to get perfect crunchy seedai.I wanted a good colour ,so took it out little early .The outside was perfect crunchy and inside was little soft.Fry more time to enjoy a full crunchy seedai.You can add sesame seeds,but i never added it.So this Krishna jayanthy/janmashtami make this quick seedai and get the blessings of lord Krishna.

seedai recipe                           How to make seedai a evening tea time snack

 Cuisine: Indian  Category: Snack   Yields:3 cups   Prep time: 20 minutes
Cook time:1 hour(including rolling)Rest time:15 minutes Total time:1 hour 35 minutes


Ingredients:
  • 2 cups idiyappam flour/Rice flour (store bought)
  • 1/2 cup fried gram/Pottukadalai
  • 1 cup coconut milk(extract thick milk with 1 cup warm water).
  • 3/4 cups water(or more water).
  • salt as required (around 1 1/4 tsp )
  • Oil for frying.
Preparation:

  • Grind fried gram in mixie and sieve it using fine mesh sieve.
  • Mix sieved idiyappam flour , fried gram flour ,salt together.
  • Prepare coconut milk.
  • Mix coconut milk to rice flour.
  • Mix all of them together to form a soft dough .
  • Cover this dough with wet kitchen towel or damp cloth for 10-15 minutes.
How to make Seedai:
  • Shape the dough to oval or round balls of small size.
  • Heat oil and fry the dough till its golden brown(approximate it takes 7 minutes for a small sized batch or may take up to 10 minutes for bigger batch).
  • Filter out the excess oil in kitchen towel .
  • Seedai is ready to be served.When storing ,store in an airtight container .

Note:
  • Make all the balls similar size ,so fried evenly.
  • Amount of the batch should be equal to oil amount .
  • You can roll the balls in oval shape or round shape.oval ones are better.
To avoid bursting/oil spills:
  • Sieve both the flours completely.
  • Keep the dough moist(cover with a cloth).
  • Try to drop the batch at the same time.This keeps the oil temperature down so the oil won't spill/burst.
