Vada pav is an elegant snack from mumbai road side. Its one of the most popular vegetarian fast food dish in mumbai and Maharashtra. I never tasted vada pav's. My better half did and he was crazy about it.When we had vada pav in Bangalore ,he used to say these never come close to mumbai vada pav. I liked the pav there but my thinking was" it must be so yummy then?".
I love pani puri,bhel chat,pav bhaji,aloo bonda all the famous north Indian snack items and tried at home. I wanted to try vada pav too for so long but kept postponing it because it is a deep fried snack. I keep a rule like once in two weeks or once in 10 days I make a deep fried snack.We usually have poori on Saturday so vada pav took so long .
One Friday I did pav buns, i wanted to make breakfast with them the next day then i thought about making vada pav. I served the pav with garlic chutney tarladalal suggested.This recipe is from tarladalal.

Vada Pav Recipe|Wada Pav
Mumbai famous Vada pav recipeCuisine: Indian Category:Dinner|Snack Yields:8 servings Prep time:40 minutes Cook time:10 minutes Total time:50 minutes
Ingredients:
- 8 pav buns.
- Oil or ghee for roasting buns.
- 4 small potatoes(boiled and mashed to 1 1/2 cups)
- 2 green chilies
- small piece of ginger
- 1 large pod garlic
- required salt
- pinch of turmeric
- Oil for frying vada.
- 1 tsp oil
- 1/2 tsp mustard seeds
- few curry leaves.
- 3/4cup besan/chickpea flour
- 1/2 cup water.
- salt required.
- 1 tsp oil.
- pinch of turmeric.
- 1 tbsp coconut/Kopri(dried coconut).
- 1 tsp chili powder
- 2 small garlic pods
- salt required.

Serving suggestions :
- Pressure cook the potatoes for 3 whistles or until mushy.
- Peel it and mash it down.
- Add turmeric,required salt as well.
- Pound ginger,garlic and green chili very well.
- Add oil to the tava. Add mustard seeds.let it splutter.
- Add curry leaves and saute it.
- Add pound paste (ginger,garlic,chili) and saute for a minute.
- Add mashed potatoes and cook them for a minute or until the raw smell of turmeric dissipates.
- Make balls of equal shape. I made 22 small balls.
- Add salt,oil,turmeric to besan flour and add required water.
- This batter has to be thick and it should cover the potatoes (so don't make it thin).
- Add coconut to tava and fry it(if using dried coconut skip this step).
- Add coconut,chili powder,garlic and salt to mixer and make it to crumbly powder.
- Dip potato filling in besan batter .
- Add it to hot oil.
- Fry it for a minute or until its completely cooked.
- Heat pav buns by applying oil and cut them in half .
- Apply chutney in between the buns.
- Place vada pav .close it and enjoy.
Serving suggestions :
- You can also add green chutney,dates chutney,tamarind chutney to the pav .
- You can bake pav/pao at home.
- Pav buns are easily available at Indian stores in US. In India you can get pav buns at retail stores,bakery.

Really tempting vada pav
ReplyDeleteThe vada is what we call as bonda over here. Dressing it in a bun is simply a way of enjoying it for a filling meal. Yum.

my all time favorite, i dont like deep fry one thats why i always make this in paniyaram pan. try it if you have that pan.
