Rava Idli Recipe | Step By Step Pictures

     Rava idli is a renowned breakfast in South India.Rava idli is a type of Instant idli prepared with sooji/cream of wheat.There is no need of grinding or fermentation for making rava idli.To make the  idli fluffy you can add baking soda or eno fruit salt.Without baking soda or eno fruit salt (leavening agents) rava idli is going to be hard and rubbery, as opposed to being soft and spongy.

       Sometimes same usual breakfast can be boring and not interesting,may be you forgot to keep the idli ,dosa batter out for fermentation.Rava idli is that all you need .Rava idli is instant breakfast like ragi idli ,so need of planning ahead.If you have yogurt at hand then you can make rava idli with in a hour.Its such an easy and so filling one.
     No need to get rava idli mix , follow very few simple steps to prepare rava idli mix. In detail temper, roast the rava,mix with other ingredients is that all you are going to do to make a simple rava idli.

    This is the softest rava idli recipe with less eno or baking soda.I have used eno fruit salt ,If you only have baking soda replace eno salt with 1/4 to 1/2 tsp baking soda with 1 tsp of lemon juice.I used grated carrots in rava idli,If you don't have carrots or if you want to prepare plain rava idli skip carrots.Check the consistency of idli batter and salt before adding to moulds.

 Cuisine: Indian  Category:Breakfast /Dinner  Serve:10   Prep time:40 minutes(including rest time) Cook time:10-12 minutes  Total Time:52-55 minutes


Ingredients:
  • 1 1/2 cup sooji/cream of wheat/rava
  • 1 cup yogurt
  • 1 cup water
  • 3/4 tsp eno
  • 2 green chili
  • 1 tbsp coriander leaves
  • 5-6 curry leaves
  • 1 carrot grated
  • 1 1/2 tsp salt.
To temper:
  • 1 tsp + 1 tbsp oil+more for greasing the mould
  • 1/2 tsp mustard seeds
  • 1/2 inch ginger 
  • 10 broken cashews
Method:
  • Add 1 tbsp oil to pan/tava add mustard seeds,let the mustard seeds splutter.
  • Break the cashews and add to tava,let the cashews change colour to brown.

  •  Add green chili ,ginger,curry leaves .

  • When it stops spluttering add rava and roast it for 5 minutes.Rava don't need to be roasted too long.

  • Let the rava cool down.You can add chopped coriander leaves now.

  • When the rava is cooled.add  grated carrots to rava .

  • You can add 1 cup of yogurt as well.

  • I added 1/2 cup water to mix them to idli batter consistency.

  • Add required salt.

  • Keep the rava idli batter covered for 20-25 minutes.
  • By this time rava has absorbed all the water ,add remaining 1/2 cup of as water as well.Mix all of them well.
  • Add water to idli pot.Let the water boil before you add the mould to pot.
  • Finally add eno to the batter and give a quick stir.

  • See ,after adding eno salt the batter is becoming frothy

  • Add the rava idli batter to already greased mould.

  • Steam the idli for 10 minutes or more until tooth pick or spoon pricked in the center comes out clean.

  • After a 4-5 seconds.Transfer idli to serving tray or bowl.
  • Serve the rava idli hot ,with chutney of your choice.

    1. eno is a fruit salt u get in stores.Look for plain eno salt you can use this dhokla,rava idli or any instant dish u want to prepare.
