Gobi masala - an easy dry masala curry, made with cauliflower.When ever cauliflowers are in season i used to buy them.Make cauliflower soup and cauliflower pepper fry just like broccoli pepper fry or make Gobi paratha.Cauliflower can be great addition to pav bhaji, vegetable kuruma, veg biriyani,Veg pulao mix veg curry or pirattal .Each of them is comforting in its own way.
Cauliflower is a healthy vegetable that provides calcium, it has high vitamin C and vitamin K. It has good anti inflammatory and anti oxidants properties and is low in fat and cholesterol.So it stays in good food for all ages category.
We had this Gobi masala with sambar rice.It can be great side dish to chapathi ,roti with some Dal.I tweaked my regular curry recipe and used tomato puree to make the cooking faster,you can also add tomato .Feel free to add some potatoes or green peas to the Gobi masala.
How can you select cauliflower/Gobi:
Choose the one which is milky white and has no damage and many leaves(leaves protect the flower ).Tightly packed cauliflower tells the freshness of this vegetable.If the florets are separated or cut , use with in a day or two.
Storing cauliflower:
Keep it in plastic wrapper by keeping the stem part down in refrigerator.Use within one week.

How to make cauliflower masalaCuisine: Indian Category:Side Serve:2-3 Prep time:10 minutes Cook time:15 minutes Total Time: 25 minutes
Ingredients:
- 1/2 cauliflower or 20-25 florets
- 1 1/2 tsp masala powder
- 1 onion
- 1 tomato pureed
- 1 tsp ginger garlic paste
- 1/2 tsp fennel seeds/sombu
- 1 tbsp oil.
- Remove the florets and add it to hot water to remove impurities or any worms.
- Chop onions and puree tomatoes.
- Make ginger garlic paste.
- Add oil to pan .While it is hot add fennel seeds.
- When fennel seeds crackle.Add ginger garlic paste and saute it for a minute.
- Now add chopped onions ,let the onions turn translucent.
- You can add pureed tomatoes now.Let the tomato paste get cooked and the water evaporate.
- Add washed cauliflower florets to pan and roast it for a minute or two.
- Now its time for spices, add turmeric powder and garam masala .
- Saute the masala without burning.Add required salt and splash some water.
- Cover and cook until cauliflower is soft and juicy.
- Your spicy,juicy Gobi masala is ready for rice,roti,chapathi.
- Enjoy this cauliflower masala with sambar rice.
