What is Garam masala powder?
Garam masala is a Indian spice mix prepared by dry roasting or sun drying many of the spices and ground to powder.This garam masala plays a major role in most north Indian sabzi's and curry even parathas.Making own garam masala powder is not very fancy.My mom usually makes chili powder,coriander powder,masala powder,sambhar powder.I never attempted to make these powders at home.I make Idli milagai podi at home other than that i prepare bisibelabath with fresh bisibelabath powder and make pepper,jeera powder for rasams and omelette's.
Now a days because of eating more north Indian curries or because of love of garam masala i finished a whole packet of store bought garam masala powder.I wanted to prepare garam masala at home for a long time.I saw this garam masala recipe in sanjeev kappor's cook book.I was just amazed its that easy ? But i was little skeptical because i skip black cardamom and mace in the masalas,so i halfed the recipe and made it in a small batch.I haven't tasted the masala in curries but sure the masala smells great and more aromatic, flavourful than store bought garam masala powder.
If you have black cardamoms and mace you can try adding them like 5 each.Now off to the recipe how to make garam masala powder.

Ingredients for garam masala :
- 1 nutmeg.
- 2 bay leaves.
- 10 green cardamoms.
- 10 cloves.
- 1/2 cinnamon stick.
- 2 tbsp pepper corns.
- 4 tsp Jeera/Cumin seeds.
- If you want a big batch better grind it in mills .The powder will be much smooth.
- Sun drying is an authentic method to prepare masalas.If you have sunlight available better sun dry the ingredients for 2-3 days and grind it.
- Actual recipe has mace and black cardamom as well.If you have some try adding 5 each.
