What is the big deal about home made paneer? Its fresh and you can eat your fill without any guilt. These days lowfat paneer is available .But i like to make paneer at home (you might think that I am crazy for making everything at home). Also I prefer homemade paneer over store bought ones because its so fresh and its so yummy . Here is how I made it ...

Ingredients:
- 5 cups milk(I used 2 percent milk).
- 1 large lime/lemon.
- Heat the milk until warm.
- Add lime juice to it and give it a stir. Now milk will start to curdle
- Switch off the flame now .
- Cover it with lid and let it stay undisturbed for 15-20 min.
- Take a clean thin cloth or may be you can use your handkerchief .
- Put the cloth inside the colander .
- Keep this arrangement inside the kitchen sink.
- Pour the milk with care (dont hurt yourself).
- If its hot ,leave it for sometime before you touch it .let the water get strained
- After it cools give a nice squeeze to filter out the water .
- Keep this arrangement inbetween two plates.
- Put some heavy weight in top to press it well (to get the shape) like 20-25 min .
- Take it out of the cloth cut it down and enjoy making your favourite paneer recipe.
