Soya Kuzhambu | Chettinad Getti Kuzhambu - Masala Kulambu

Soya Kuzhambu - a tasty south Indian style thick gravy prepared for rice.Even variety exists like Poondu kuzhambu(garlic gravy),Summa kuzhambu(no vegetables),poricha kuzhambu( prepared with coconut and no tamarind) ,Moru kulambu(made with buttermilk and ground coconut paste).

       Basically kulambu is a gravy without dal ,may or may not have tamarind ,may or may not have coconut. Sambar is not only the main gravy prepared for rice,kulambu often peeps in the menu on any south Indian household.In chettinad marriages there are 2 different gravies served for rice- thanni kulambu(a little thin sambar) or sambar(often has more dal), getti kuzhambu or thick gravy with brinjal apart from soup and rasam.Different sides are served along( thinking about the big feast is making me hungry again).

   This recipe is a variation of brinjal getti kuzhambu served in marriages.Got the recipe from my mom who often eyeballs any ingredient.She asked me to adjust the coconut quantity.I added many soya chunks because my family loves it. Include more coconut if you want a very thick gravy for this amount of soya.Any poriyal or kootu goes best when served along.

Step By Step Picture recipe for making soya chunks kulambu:
  • Add soya chunks to boiling water.
  • Switch off the flame ,let it sit in the hot water for 3-4 minutes until it puff up.
  • Drain the water and add cold water.squeeze the water out,cut in half and keep it ready.You can also add 1 tsp milk to reduce the soya smell.
  • Dry roast coconut,fennel seeds,jeera,red chilies,roasted gram and grind along with 1/4 of tomato to fine paste.

  • Add oil to tava  and temper with mustard and fenugreek seeds.Allow mustard seeds to splutter before adding fenugreek seeds.Add onions and saute until translucent.Then add tomatoes and cook it through.

  • Now you can add soya chunks to tava.saute it for a minuted.Add required water ,tamarind paste and  ground coconut paste.Add salt to the gravy.Let this gets boiled until thickens.gravy is ready.

soya kuzhambu                         How to make soya kuzhambu recipe

Ingredients:
  • 2 cups soaked soya.
  • 1 onion.
  • 1 tomato.
  • salt to taste.
  • water required
  • small piece of tamarind soaked in water for 15 minutes.
To grind:
  • 2 tbsp coconut.
  • 1 tsp roasted gram/pottu kadalai.
  • 1 tsp fennel seeds/sombu.
  • 1/2 tsp jeera/cumin seeds.
  • 2 red chilies.
To temper:
  • 2 tbsp gingelly oil
  • 1/4 tsp mustard seeds
  • 1 tsp fenugreek seeds/vendhayam.
Method:

  • Soya chunks getti kuzhambu is ready.Have it with kootu or any stir fry.

  6. The Chettinad Getti Kuzhambu is indeed a perfect accompaniment with both rice and rotis. The thick gravey with protein rich soya chunks, is making the dish more yummy.

  8. Wow... the dish looks as authentic as the name sounds... I have had a thinner version of sambar, rasam and thick version of the same too in south indian restaurants here. The gravy looks delicious
