Puffed Rice Upma a filling and yummy breakfast of north Karnataka. 'Pori' we call in Tamil is made by puffing the rice in steam over a sand filled oven. It is considered to be healthy with iron content. This can be a snack as is while they are crunchy along with roasted gram,roasted coconut,some sweet candies and sure is healthy and filling for kids and adults.Even I make kara pori and pori urundai with mandakki(called in north karnataka and andhra).
But I am skeptical to know it can make a filling breakfast.Uggani (they call it) is pori upma and it has an entirely different taste ,very filling and really delicious snack. Uggani is actually paired with mirch bajji in the state of north karnataka. Usually, we all know about the breakfast our mom makes and after marriage from the mother -in- law. So I never had a chance to know about this beauty until I ate at my friend's house.This one stole my heart recently.She prepared it for kids snack and gave it to me for tasting.I was really full so was thinking of having just one spoon .But I keep eating until I finished the whole cup(hehe).

Step By Step picture recipe for making pori upma :
- Wash puffed rice 2 -3 times and squeeze the extra water and keep it aside.Grate carrot,coconut and keep it ready.Chop onion,green chili,corn and prepare roasted gram powder.
- Add oil to the tava while it is hot add mustard seeds.
- When the mustard seeds splutter,add peanuts,chana dal and roast until brown.
- Then add onion,green chili.When the onion turns translucent/ soft, add vegetables and required salt.
- Now add squeezed rice and give a mix.Cover and keep it aside for 1 minute.Finally, add grated coconut and roasted gram powder.
- Switch off the flame. Add lime juice and chopped coriander leaves and serve immediately.

Ingredients:
- 4 cups puffed rice.
- 1 carrot grated.
- 1 handful of corn.
- 1 onion.
- 2 green chilies.
- few strands of coriander leave(2-3).
- 1 tbsp grated coconut.
- 2 tbsp roasted gram powder.
- salt as required.
- lemon for taste.
- 1 tbsp oil
- mustard seeds.
- urad dal
- 1 tbsp chana dal
- 1 tbsp peanut
- few curry leaves.
- Wash puffed rice 2 -3 times and squeeze the extra water and keep it aside.
- Grate carrot,coconut and keep it ready.
- Chop onion,green chili,corn and prepare roasted gram powder.
- Add oil to the tava while it is hot, add mustard seeds.

- Add onion,green chili and saute until onion turns translucent/ soft, add vegetables and required salt,turmeric powder.
- Now add squeezed rice and give a mix.Cover and keep it aside for 1 minute.Finally, add grated coconut and roasted gram powder.
- Uggani ready.switch off the flame, add lime juice and chopped coriander leaves and serve immediately.
- Skip peanuts, if adding corn or any crunchy vegetable.
- Add tamarind juice if you don't have lime juice.
- Add your favorite vegetables to give a unique taste.
- This is a wholesome and filling meal with an equal amount of protein ,carb, and other nutrients.
simple light dish .. it can be served as snack too.. Yum!
