Strawberry Birthday Cake : A moist cake you can make at home for your loved ones without any eggs.Does this sound interesting? I made this cake for my daughters birthday,she loved ..loved.. and loved it so much.
Planning for making a cake started 1 month before because i am little taken back ,yes !! this is the first time i am making a birthday cake.My daughter wanted her favorite paw patrol figure on the cake so was thinking of how i am going to draw a figurine on the cake.I saw gayathri kumar's frozen butter cream transfer then i realized this is what i want to do on the birthday cake.She is one of the best blogger having so many wonderful egg less cake recipe.First i thought of making sponge cake with eggs ,but some of her friends are vegetarian.Finally decided on this egg less strawberry cake.
Now..I fixed the recipe ,I have to buy confectionery sugar and colors because i always carry all purpose flour and butter.If there is no confectionery sugar, you can grind regular sugar in flour mill to make it to powder.
Then finally the day has come i have to make the cake. I started cake baking by keeping the butter at room temperature for 2 hours.(This may vary depends on your climatic condition).Mixed dry ingredients to wet ingredients and the cake batter is added to already greased and floured glassware.Baking took little more than the recipe called for but ,I got convinced that i used glassware to bake the cake.If you use aluminium cake pan, the cake will bake faster.Then comes the cooling part.It was a hot day,so that too took more time.After cooling i brushed the cake with sugar syrup.This makes the cake moist and not dried when you keep it in fridge.
I made frosting the mean time ,kept in fridge in an airtight container(because butter frosting will become dry when exposed to air(this can vary depends on the temperature and frosting butter).Made paper cones with butter paper/cookie sheet for piping the figurine.
Then mixing of colors started(my little girl helped me doing this).Filled the cones and started piping.My outlines were not perfect in color and in shape,but went ahead and filled the colors.I used colour brush to make the frosting spread even in the traced figure.Kept the figurine (which is in Cookie sheet then glued to a hard surface like cutboard) in freezer or fridge.I took the frozen butter cream out and Flip it directly on the frosted cake ,but most of the frosting is sticking to the paper itself.Alash !!! I kept the butter paper as is and covered the cake with the glass ware again kept in fridge.It was perfect the next day (with little flaws i made).If i can make why not you,start baking..

Ingredients:
For the strawberry cake:
- 3 1/2 cup All purpose flour.
- 1 1/2 cup sugar.(if you are not making frosting increase sugar to 1/2 cup more).
- 1 tsp baking soda.
- 1/2 tsp salt.
- 2 cup strawberry.
- 1 cup milk.(room temperature)
- 1/4 cup oil.
- 1/4 cup butter.(room temperature)
- 1 tbsp vanilla.
- 2 tbsp lemon juice.
- 4 cups confectionery sugar.
- 2 stick butter
- 1 tsp vanilla extract
- 2-3 tbsp milk.
- 1/2 cup sugar dissolved in 1/2 cup water and simmered for 3 minutes and cooled.
To make strawberry birthday cake:
- Preheat the oven for 10 minutes at 350 degree Fahrenheit.
- Grease a oven safe bowl/cake mould then add flour and turn the bowl to remove excess flour.I made round butter sheet for the bottom.
- In a bowl mix dry ingredients sugar,flour,baking soda,salt and mix well for even distribution.
- In a large bowl mix butter then add butter and mix in medium speed.Next add milk,vanilla essence and oil and mix it.Finally add lemon juice, mix well.
- Now slowly add dry ingredients to wet ingredients in 3 parts.Mix until they are well combined.
- Pour in the batter to already prepared pan/mould.
- Bake it until a tooth pick pricked in middle comes out clean.
- Cool for 15-20 minutes and take it out and keep in wire rack to cool down.
To make vanilla butter cream frosting:
- Start beating butter in a large bowl.
- Add sugar 1/2 cup at a time until its mixed in butter.
- Add vanilla essence towards the end.
- If the butter cream is too dry add 1-2 tbsp of milk and mix it at the end.
- If you add shortening and butter then adding of milk is essential.
Assembling:
- Prepare sugar syrup,cool it and brush it on cake after its cooled down.
- Cut the cake and apply frosting in the center.
- Stack one above the other.
- Apply frosting on top and start to spread to the sides.
- finish and write your birthday message on top.
- Strawberry birthday cake with vanilla butter cream frosting is ready after 4 hours of hard work ..
- Original recipe is made with millet flour and oil.
- Renee used gum to make the millet flour stick together.In our case all purpose flour forms gluten.You can use jello-o or any gelatin in case if you are using millet flour.
- You can use vinegar instead of lime juice.
- Frosting is more moist because i added more butter.You can try with little less butter or can add half shortening and half butter.This case frosting dries faster(i am thinking ....)
- I needed more strawberry for flour.Start with 1 cup and increase later when it is required.
- Adding of oil is essential.I added regular oil you can use olive oil too.
- If you are making the cake ,the day before party Keep the cake out at least before 2 hours .This time is needed for the cake to become moist.
- Keep the remaining cake in airtight container and microwave for 20-30 seconds.Frosting will get melted if you do so.
