Curd Rice/Thayir Sadam

      "Rice" being a staple south Indian Food, we need variety of rice dishes .Variety varies from delicious  "biriyani" to simple "tomato rice" .Curd rice is the easiest of all rice varieties.Some people even think ,why  are you giving the recipe for this rice ?Some times easy recipe gets faulty and the day got ruined because of not getting the simple  "Yogurt" rice .The trick is you have cook the rice mushy and cool it down before you add curd to it .If the curd is too tangy you can add little milk to get right taste.
 Some common names of this rice "mosaru anna" or "bhagala bath" in Kannada,"Yogurt rice "in telugu .Its commonly called as "thathi Annam" in Tamil Brahmin's community.

Curd rice

Cooking time:15 +5 min
Serves:1-2




Thayir sadam

Ingredients:
  • 1/2 cup raw rice/Pacha arisi
  • 2 cup water
  • 2 tbsp pomegranate seeds/madhulai muthu(optional)
  • Salt as required
To temper:
  • 1 tbsp oil
  • Few cashews(optional)
  • small piece of ginger/Inji
  • 1/4 tsp mustard seeds/kadugu
  • 1/4 tsp urad Dal/Uluntham paruppu
  • 1 green chili
  • few Curry leaves/Karuvepilai
Method:
  • Cook 1/2 cup rice with 2 cups of water (or more accordingly)

  • Cool it down by transferring it to wide bowl .
  • Add curd/yogurt and mix well.In case if you are adding milk add it as well.

  • Heat the tava add oil to it .
  • Add mustard seeds and wait for it to splutter.
  • Add urad Dal ,let it change colour.
  • Add slit Green chili,ginger to it and saute 5 seconds .If you are adding cashews add it now and saute it until brown.
  • Add curry leaves as well .

  • Add this tempering to the rice.

  • Mix them well together .
  • Top it with pomegranate while serving .
Curd rice is ready to eat .Devour it 

Yogurt rice

Note:

  • Cook the rice with more water(add at least 50 percent more water than regular)
  • Cool it down completely before adding curd/yogurt
  • Break the lumps in rice.
  • Add milk if the curd/yogurt is more tangy even it  makes the rice more creamy .
  • Adding of pomegranate is optional you can add dried cranberries as well .
