Rasmalai Recipe | Rasmalai With Rasgulla | Easy Method

       Rasmalai one of the best known Bengali sweet recipe of India. I love rasgulla and rasmalai for its soft spongy texture. I tried this easy dessert recipe at my friend's house once we went for a get-together. I really liked it. She said it's quite easy to make at home.So I am all ears for the recipe.

        She explained to me how to do it.Then I made this sweet for my husband's birthday which happened a few days ago. I am posting this recipe In order to welcome this upcoming Tamil new year. Every year Tamil puthandu happens on  14 th April. Chithirai is the start of the year and is holidays for all kids. So try this quick sweet at your home and make kids happy.

       Rasmalai is nothing but Soft Indian cottage cheese made into balls and is dipped in rich reduced milk/Thick milk. But In this method, you are going to buy rasgullas at the store then prepare rabri or thick milk in which the cottage cheese is being dipped. So You don't have the headache of going through a long process of curdling the milk and wait to squeeze the water out. Then soften  and cook it through. If You have a guest at home you can make this while you guys are happily chatting.You have a choice either you can make at home or buy in stores.

Step by Step picture recipe for making rasmalai with rasgulla:
  • In a deep thick bottomed pan add 1-litre/ 5 cups of milk.

  • Let it boil until it gets reduced to like 4 cups.Give a mix in between so that it doesn't stick to the bottom. Keep the flame low and keep an eye not to spill over the milk.
  • Grind the nuts rough and keep it ready.
  • Open the can and Drain all the excess sugar syrup from rasgulla's.Gently Squeeze and keep it aside.
  • After the milk is reduced, add turmeric.If you have saffron, you can add later at the final stage.Add condensed milk to the pan and check the sweetness.If it's not enough, add sugar and mix well.

  • Add nuts,drained rasgullas to the reduced milk.Add ground cardamom pods and saffron strands as well.

  • Your rich creamy dessert is  ready. Serve it for your guest they will surely ask you for the recipe.

Ingredients:
  • 15 rasgullas.
  • 1-litre milk/paal.
  • 3-4 tbsp sugar.
  • 1/8 tsp of turmeric(you can avoid if adding saffron).
  • 1/4 cup sweetened condensed milk.
  • few strands of saffron(optional)/kunguma poo.
To grind:
  • 1 handful of cashew/mundiri.
  • 1 handful of almonds/badam.
  • 1 handful of walnut/vadhumai kottai.
Method:

  • Add 2 -3 cardamom pods too.
  • Add nuts ,drained rasgullas to the reduced milk.You can add saffron strands as well.
  • Your rich rasmalai is  ready. Serve it for your kids they will surely ask you for more.
