Pineapple kesari or kesari bath is a popular breakfast item of karnataka.Kesari is a sweet,flavored with saffron to get the natural yellowish tint to the dessert. Because of the affordability now a days saffron is less used and is replaced by edible food colors.
Chow chow bath is one of the well known breakfast in Bangalore and karnataka.Chow chow bath consists of kesari bath and khara bath,the first one is sweet and the later is a spicy version.Both being made from rava/semolina /sooji.
In north India the dessert made with sooji is called sheera.There are so many different version of sheera exists like banana,rice,pineapple,mango.The basic ingredients remains like rava,ghee,sugar and cardamom remains the same in all.When you add moong dal to rava it becomes a chettinad famous ukkarai.
Enough of blabbering about sheera.Let me tell you the procedure .Its is really easy, cook pineapple in water and follow the same procedure of regular kesari.I did this sheera to a get together party and everybody was saying it resembles the kesari served in marriages during breakfast.So try and let me know how it turned out for you.

- Roast rava with 1 tbsp of ghee until brown or until a nice aroma comes.Wash ,peel and chop pineapple and keep it ready.
- In a heavy bottom pan add 1 tbsp ghee and roast the cashews until brown.Save the cashews for later.
- Add 4 cups water to the same pan while its boiling, add chopped pineapple pieces.Cover and cook for 3-4 minutes.4 minutes is enough if the fruit is juicy enough to give the favor to water.Add edible food color of your choice.I added lemon yellow to give a same color as pineapple.
- Now add roasted rava without forming lumps.When all of the water is evaporated, add sugar to the rava,while adding sugar lumps may occur.Break it when you see big ones.The reason why you need to avoid lumps is sugar will not penetrate to it.So better smash it .
- After all the sugar is absorbed,switch off the flame.Add cardamom powder and mix well.Add roasted cashews and tutti fruity on top .Add 2 tbsp ghee to the top as well.
- Rava kesari is ready to be relished.

- pineapple - 2 cups.
- roasted rava/semolina/sooji-2 cups.
- cardamom-2-3 pods.
- ghee - 4 tbsp.
- sugar 3 cups.
- roasted cashews and tutti frutti
- edible food color (yellow) - a pinch
- water- 4 cups.

Note:
- For natural food color, add saffron strands to warm milk/water and use it before adding rava.
- This exactly resembles marriage style kesari.
- You can reduce the sugar to 2 cups but the taste will be less.
