Mushroom masala a super quick spicy stir fry for rice.Its a dry version of regular masala made for chapathi.
Mushroom one of the much liked vegetable (fungi) in our house.Its spongy - chewy texture makes it favorite with our little kiddo .
There are two varieties, one is edible other one is poisonous.So when you pick it from your back yard don't forget there may be some poisonous spices.If you are very sure,then you can go ahead and cook otherwise it may cause serious allergic reaction.
The common edible type -white button are usually grown in farms.They are low in calorie and high in protein,carbohydrates ,potassium essential B vitamins and minerals.
Its a versatile fungi used in almost all cuisine either cooked or raw(i never saw eating in raw form.Please educate me) like fried rice ,Korma,Gravy ,Momos,pasta,biryani,soups shows that it is being used widely and varied..Saute just sprinkle some salt and pepper your wonderful low calorie side for bread or meat is ready in few minutes.So choose accordingly and enjoy cooking with it ..

In our town eating mushroom is considered to be a royal feast.I happen to see them only during my Bangalore visit right after my college days.That time its not at all sold by any vendors or in any markets in our town .Now its available, but at a high price and gets sold really fast even before dawn .Even now we never get to see them while we visit our parents ..people in metropolitan cities are really blessed , at least they can eat /see whatever they wish he he ..

Step by step picture recipe for making spicy mushroom stir fry:
- Wash the mushroom's by soaking in water for 10 minutes.If you really don't have time wash in running water for 2-3 times to remove the dirt.Even if its already cleaned it may have some dirt in the surface.Peel off the skin.Chop them in to thin slices.
- Prepare ginger garlic paste and chop onion,tomatoes.Slit green chilies and keep it ready.
- Add oil to the pan .When its hot, add fennel seeds.After the oil got aromatic with fennel add onions and saute for sometime.After a while, add Ginger garlic paste and green chilies as well.
- Saute till onion is translucent.Add tomato and cook it through.
- Add washed and chopped fresh mushrooms as well to the pan.Saute it for a minute.Add required salt,turmeric and spice (masala) powder.
- water will ooze out.Check spice and salt while its cooking.When most of the water evaporated,switch off the flame.
- Spicy masala dry is ready for rice /roti or paratha.

How to make mushroom masala for rice

- 8 oz mushroom(230 grams).
- 1 small onion.
- 1/2 tomato.
- 1 tsp masala powder(substitute with chili and coriander powder)
- requires salt.
- 1 tsp ginger garlic paste/inji poondu.
- 1 green chili.
- little turmeric.
- 1 tsp oil.
- 1/4 tsp fennel seeds/Sombu.
Method:

You eat raw mushroom in salad, specifically portobello mushroom, even in cold pasta salad too. I love raw mushrooms, best to make mushroom pizza or parmigiana
