Banana oats muffin/Breakfast muffin/Healthy muffins

I wanted to use up the bananas which were laying in pantry for a long time. My daughter eats morning breakfast at home and goes to school (Even though most kindergarten schools provide breakfast ), so wanted to make her a healthy breakfast alternative apart from cereals (she loves cereals). Oats is a healthy whole grain and it has many benefits lowering cholesterol being one of them.

Muffins when made correctly are an healthy alternative to our staples idly, dosa. No butter not much oil and is  low in calories compared to cakes. No heavy beating of eggs, cream, butter and sugar. Mix the ingredients ,fill the cups ,bake it .Your muffins will be ready .Very easy and they are very very filling too .You can store this for 3-4 days it an airtight container. Kids love eating them whenever they wish .



Preparation time:10-15 min
Cooking time:16-20 min

Ingredients:
  • 2 ripe bananas.
  • 1 egg(optional).
  • 2 tsp corn oil.
  • 1/2 cup milk (I used 2% milk).
  • 3/4 tsp vanilla extract.
  • 2/3 cup whole wheat flour.
  • 1/2 cup oats
  • 1 3/4 tsp baking powder.
  • Pinch of salt.
  • 1/4 cup brown sugar.
  • 1/2 tsp cinnamon powder.
Method:
  •  Combine oats,wheat flour,salt ,cinnamon powder,sugar ,baking powder in a mixing bowl.
  • Mash the bananas well.
  • Add vanilla,egg,corn oil,milk to it and beat it well with your spoon.
  • Add wet ingredients to dry ingredients and mix them well together.
  • Scoop the mixture in to cup cake mould .

  • Preheat the oven to 375 degrees for 5-10 min.
  • Bake them for 16-20 min or tooth pick comes out clean.
  • Very soft fluffy muffins are ready for your breakfast.



Note:
  • I used whole wheat flour instead of bleached flour (All purpose flour)
  • If you don't want eggs you can avoid it,Muffins will still be soft with out eggs (I made egg less version too).
  • Cool them completely before storing them otherwise they turn mushy (Happened to me once )
  • This recipe has less sugar. If you prefer sweety muffins ,you can increase the sugar to 1/2 cup .
