There are many items in indo-chinese.Vegetable fried rice will be a quick and healthy and really tasty too,among others.I will try to make and post more indo chinese in future.I have a love towards noodles and fried rice .I prefer ordering them when we visit near by restaurants.
Kids too love these different rice variety,don't like regular sambar,rasam. They should love their lunch boxes,not to bring anything back?.By making these vegetable fried rice you definitely can achieve the above goal.
Mushroom fried rice(mushroom lovers got to check these for sure) and veg momo's is kind of boring.I tried to replicate Chinese fried rice ,but failed in all my attempts.Yeah !! poor me.Really i am very curious ,how they bring in the flavors ,is because of oil ?sauces ? crunchy fresh veggies ? or the day old rice?.If anybody got to know the secret tell me ,so i can share with readers of kitchenodyssey.

Vegetable Fried Rice Recipe | Indo Chinese
How to make indo chinese veg fried riceCuisine: Indo Chinese Category:Lunch | Dinner Serves:2 Prep time:20-25 minutes Cook time:10 minutes Total time:35-40 minutes
Ingredients:
- 1 1/2 basmati rice.
- 1/2 bell pepper.
- 2-3 green chilies.
- 1 carrot.
- 2 tbsp peas.
- 3 Spring onions/Green onions/Scallions.
- 3 mushrooms.
- 1 cabbage leaf.
- 4 tsp soy sauce.
- 1 tsp pepper powder.
- 2 garlic pods(cut in to small pieces).
- 1 inch ginger piece.
- 2 tbsp oil.
- salt required.
- Soak basmati rice in water for 10-15 minutes.
- Drain the excess water.
- Add equal amount of water and 2 drops of oil.
- Pressure cook it for 2 whistles.Keep the cooker off the stove after you switch off the flame.
- Cool the rice and keep it aside.
- Cut the vegetables in Julian(thin -long pieces).
- If using frozen peas,keep in room temperature for an hour or so.
- Cut the spring onions white part and green part separate(don't use the whole green stem, they will be very chewy,taking up to half of it will do).
- Add oil to the tava,add finely chopped green chilies,spring onions and saute it for a minute.
- Add ginger and garlic and saute it until it gets cooked.
- Add carrots,bell pepper and saute for 2 minutes.
- Now add mushrooms and peas .Saute it for 2 more minutes.
- Finally add cabbage ,saute for a minute.
- Add soy sauce and salt.Let the veggies be in sauce for a minute.
- Finally add pepper powder to the soy sauce.
- Mix the cooked and cooled rice.Every part of rice gets pepper,sauce and veggies.
- Finally add green part of onions.
- Vegetable fried rice is ready to be served.Isn't it very easy?
Note:
- Vegetables has to be crunchy at the same time they have to be cooked well.
- Fried rice has to have little more salt than regular variety rice.
- Adding of spring onions bring out a excellent flavor,try to add it.
