Sweet pidi kozhukattai -is an easy snack made with ground rice batter. A healthy 5 ingredient snack.I made them in traditional way(Yes !! i ground the rice to batter and prepared).Its soft ,fresh,tasty and what not entirely delicious.
While everybody is doing modhak(poorna kozhukkattai ) for Ganesha chathurthi.I made this different style of kolakattai for our plumpy elephant headed lord.What makes this kozhukattai so special ? Its made in traditional way not using rice flour.
Traditionally kozhukkattai's are prepared by grinding the rice to batter then it is made to a dough by cooking in the pan.It makes the final outcome so soft,fresh and also very pure without any preservatives.I also like using rice flour when i am really in a hurry or not in the mood to do grinding.Its easy to make dumpling with rice flour but doing ground batter method will bring back the memories of our olden /golden times,isn't it ?
You can make this kolukattai as an evening snack or for a get together.You can use raw rice if you don't have idli rice.kolukattai made with sona masoori /raw rice is little hard after it cools down.But this one remains soft if you cover them properly .Mom asked me to add coconut pieces ,but i added grated coconut when i did the previous time.
Sugar adds a mild sweetness while the salt adds deliciousness the kozhukattai needs.Soaking and grinding is the only things you need to do a bit extra than using the rice flour,but there won't be any cracks and it remains soft even after long time. If you plan ahead, you can make them in a jiffy.

Step by step picture recipe for making sweet pidi kozhukattai:
- Soak boiled rice/idli rice after washing it 2-3 times in fresh water.Drain the excess water in a bowl and grind the rice using the drained water,to a smooth paste.Very fine particles of rice is fine.Add required salt to this batter.
- In a pan add 2 tbsp oil (if you have non-stick pan you can reduce the oil quantity).
- When the oil is hot add ground rice batter to it.
- Keep stirring the batter until it thickens.
- Finally add sugar to the thickened dough(yeah batter should have become softened dough by now) .
- Fry chopped coconut pieces in oil and add. You can add the chopped coconut pieces as is.If you don't have chopped coconut add grated coconut .I didn't add any while preparing this kozhukattai but usually add grated coconut.
- When you can bear the heat make them in to kolakattai by taking small portions of the dough and pressing using your four fingers except the thumb.
- Steam them for 10 minutes or until its has glossy outside.
- Pidi kozhukattai is ready for neivedhyam or you can serve this as a snack as well.It will be very soft and kids would love the sweetness in the kolukattai.

RECIPE: Spicy Chicken Wings Recipe
---------------------------------------------------------------
Ingredients:
Chicken wings, with skin - 8 – 10 nos
For the marinade:
Salt - to taste
Garlic, chopped - 1 tsp
Soya sauce - 1 tbsp
Oregano - ½ tsp
Lemon juice - 1 tbsp
Black pepper, crushed - 1 tsp
For the Sauce:
Spring onions, finely chopped - 2 tsp
Vinegar - 1 tbsp
Brown sugar - 1 tsp
Tomato ketchup - 1 tbsp
Chilli sauce - 1 tbsp
Directions:
1. In a mixing bowl, add in little salt, finely chopped garlic, soya sauce, oregano, lemon juice and freshly crushed black pepper. Mix this marinade well.
2. Add the chicken wings in the marinade and coat it well. Rest the marinated chicken wings in the fridge for at least 2 hrs.
3. Sprinkle some flour over the chicken wings and mix well. Repeat this for about 2 to 3 times. (This will help in giving a nice texture and crispness to the chicken wings on frying.)
4. Preheat the airfryer at 180 degree C for 3 mins.
5. Remove the tray and drop in the marinated chicken wings and fry for 6 minutes at 180 degree C.
6. After 3 minutes, remove the tray and toss the wings and fry again.
7. In another bowl, take finely chopped spring onions, vinegar, brown sugar and mix well until the sugar melts.
8. Add tomato ketchup, chilli sauce and mix well.
9. After 6 mins, open the tray and coat the chicken wings with the sauce and refry them again for 2 to 3 minutes.
10. Remove and serve hot
