Hummus dip from the middle east- that's all i know.When i googled i got to know more details.Here are some i read in wikipedia.'Hummus' in Arabic means chickpea Yes!! we are calling only the main ingredient also called garbanzo/chana.The complete name of the spread in Arabic is hummus bi tahina.It's an Egyptian food then became popular all over middle east.
Even though the main ingredient is Channa there are many more flavors that makes the hummus most delicious.The First one is tahini ,Tahini is a paste made of sesame seeds .This paste adds a subtle flavor to the dip where second one garlic adds a little spice, red pepper gives a little sweetness and lime gives the sourness this dip needs.
Usually people add canned garbanzo bean for making quick hummus.I prefer doing it from scratch and not to buy canned items.I soaked and pressure cooked the garbanzo bean and blended with other ingredients to make the most favorite and protein rich hummus bi tahina.
Because we use the dry ones, it has to be cooked until mushy .Then it is easy to blend to a puree.I made them in a short notice ,so got less time to cook.I added more oil whenever there is a need of liquid.I added some water too ,because i felt i am adding more calorie by adding more oil.Finally i got a, not fine not so chunky hummus which we liked a lot.
I roasted the red pepper,garlic and jeera in a pan on stove top.You can also directly roast the pepper on the gas .Use jeera powder if you have some,instead of whole cumin.
If you are interested in more dip check guacamole (made with avocado),strawberry salsa ,creamy avocado,pineapple salsa.

Step by step picture recipe for making red pepper hummus:
- Soak Channa for 7-8 hours.Pressure cook it for 3-4 whistles until mushy.Drain the excess water and keep it(you can use the water in your soup or sambar ).Roast red pepper,garlic,jeera,sesame seeds separate.
- Add sesame seeds and red pepper to small mixer and made it paste.Add this puree to cooked garbanzo beans ,salt,lime juice and make it to puree.Add oil whenever required.Finally check the salt and texture .
- Red pepper hummus is ready.

How to make red bell pepper hummus recipeCuisine: Egyptian/Middle East Category:Dip Prep time:7-8 hours Cook time:40 minutes Total Time:8 hours 40 minutes
Ingredients:
- 1/2 cup garbanzo beans (soaked and pressure cooked)
- 1/2 tsp jeera/cumin.
- 1/2 red pepper .
- 2 garlic cloves.
- 1 tbsp sesame seeds.
- 1/2 tsp salt or as required.
- around 1 tbsp lime juice(adjust).
- Soak Channa for 7-8 hours.
- Pressure cook chickpea for 3-4 whistles until mushy.
- Drain the water and keep it aside(u can use the water in soup or sambar ).
- Roast red pepper,garlic,jeera and sesame seeds one by one.
- Add sesame seeds and red pepper to mixer(sesame seeds was very less so i used red pepper )and grind it to smooth paste.
- To this paste add cooked garbanzo beans ,salt,lime juice and make it to puree.Add oil whenever required.
- Finally check the salt and texture.
- Red pepper hummus is ready.Enjoy with your chips,biscuits in sandwiches or in pita breads.
