Dum :a process of cooking the biryani without water.Rice and vegetables/meat is cooked in the steam/dum process until fully done.Rice get a perfect texture and wonderful flavour by cooking in this process.
There are two different type of biryani one is cooked or pakki , other one is uncooked or raw -also called kutchi or kucchi and are often prepared with basmati rice or jeeraga samba rice in south India.Jeera samba is a rice similar to jeera/cumin really small and a very tasty variety.
Also biryani differs by region some famous biryani's are rauther biryani,thalappa katti,thalaserry ,Ambur,dindigul and hyderabadi where the spices and types of preparation may vary and expecially their taste.
In purattasi month( a Tamil month where people eat only vegetarian food and pray god Vishnu) only vegetarian food is eaten by many south Indians.So after seeing lots of video's and lots of experiments we finalized a recipe(this is our own recipe).

Step by step picture recipe for making vegetable dum biryani:
- Wash vegetables and chop everything in big pieces.
- Add yogurt,salt,turmeric,garam masala and biryani masala to the veggies.
- Give a stir and keep covered in fridge for 15 minutes.
- Add enough water to a deep pan add bay leaf,cardamom to the water.Deep fry the onions after chopping and drain excess oil in paper towel. keep it aside.Add enough salt ,turmeric and mint to water.When the water is boiling,add soaked rice.
- When the rice breaks in to three parts ,drain the excess water using colander and keep the rice aside.
Dum Process:
- Add butter and 1 tsp oil to the bottom of dum pan.Add chopped tomato and fry for some time until they are juicy.You can fry ginger garlic or add it to marination.Add marinated vegetables on bottom layer.Next add one layer of rice then fried onions.
- For the final first layer add chopped mint and coriander leaves.Then add next layer of rice ,fried onions and mint /coriander leaves .
- Roll the chapathi dough to thin strip and cover the lid of dum pan with the dough.Cover the pot with this lid and keep in 450 degrees fahrenheit oven for 10 minutes and 300 degrees for 20 minutes.Take it out and mix gently. Dum biryani is ready to serve.
Tip:If you don't have oven simply place the pot on stove top and cook it on low heat for 35-30 minutes.

- 1 tsp butter or ghee.
- 1 tomato.
- 1 large onion for frying.
- 1 cup chopped mint ,coriander leaves.
- salt as required.
- Vegetables 5-6 mushroom,2 carrot,1 potato, 1 bunch broccoli.
- 2 tbsp biryani masala.
- 2 tbsp yogurt.
- little turmeric
- 1/8 tsp garam masala.
- 1 tbsp ginger garlic paste.
- little salt.
- 1 3/4 cup rice soaked for 15 minutes.
- 1 cardamom.
- 1/2 bay leaf.
- little turmeric.
- salt as required.
For Dum covering:
- 1/2 to 3/4 cup of wheat flour kneaded to dough.
Method:
- Deep fry the onions after chopping lengthwise. Drain excess oil in paper towel. keep it aside.

- Add enough water to a deep pan add bay leaf,cardamom to the water.
- Add enough salt and turmeric to water.
- When the water is boiling,add soaked rice.
- When the rice breaks in to three parts ,drain the excess water using colander and keep the rice aside.

- Take it out and mix gently. Dum biryani is ready to be served.
