PaniPuri/GolGappeWithWheatflour

            We bloggers need some challenge to make ourselves motivated .I joined  north vs south challenge team on dec 2013.From January i am participating in this challenge and it was so much fun.There are two groups .You guessed it right north team and south team .I belong to south team and have to face the challenge by north team .Every month one challenge will be given and we south team has to finish the challenge with in the same month and post in our blogs .This month north team(prachi) challenged us with golgappa which is everybody favourite .
         This is my very favourite but prachi challenged with more panis for puris and healthy puris with wholewheat flour .As i was in holiday mood i prepared it earlier this month and more over all the ingredients used are easily available in your pantry .So start making it .Its not tough ,after you prepare puri(which takes an hour or so) making pani takes no less than 10 minutes.
       I prepared only 2 types of pani (tamarind and green ) and was not able to take stepwise pictures of the pani making process .When i do it next time sure will update the pictures .

Preparation time: 40 min (30 min rest time)
Cooking time:30-40 min
Yields:Around 100 puris(1 cup each chutney)






Ingredients:

For puri:
  • 2 cups wheat Flour.
  • little hing
  • 1 tsp salt
  • 1 tsp oil
  • 1 cup water
For green chutney/Hot chutney
  • 1 tbsp mango grated
  • 1 green chili
  • 10 strands of coriander leaves/kothamalli
  • 1/4 cup mint leaves/pudina
  • 1/2 cup water (or dilute it )
  • Salt required
For tamarind chutney/Sweet chutney
  • 1/ 4 tsp tamarind paste
  • 3 tsp sugar
  • 1 tsp roasted cumin powder
  • little black pepper
  • pinch of salt
Potato stuffing:
  • 2 small potatoes(boiled)
  • 1/4 tsp salt
  • 1/4 chili powder

Method:

For Puri:

  • Mix all of the ingredients and make a little thick dough .Knead them well to make the dough soft.
  • Keep it for half an hour covered.
  • Divide the dough in to 8 equal parts .
  • Roll them to form a thin log.
  • Divide it in to 15-16 pieces using  a knife.

  • Roll them to make small puris .
  • Keep the oil filled kadai/tava in high flame.
  • When the oil is so hot  .Drop the puris one by one (around 5 puris in a batch or 10 if the tava is big)
  • Press the puris when they come up (so that it puffs).
  • Flip it again and wait till it changes colour to brown .
  • When both sides are brown .Take the puris out .

  • Drain the excess oil in kitchen towel.
  • Store in an airtight container until use.
For hot chutney:

  • Wash mint and coriander leaves thoroughly .
  • Add the grated mango,chili ,mint and coriander leaves to the mixer .
  • Add little water and grind it to a smooth paste .
  • Add salt to the green chutney and bring the water to required consistency .
For sweet chutney:

  • Add tamarind pulp with 3/4 cup of water
  • Add sugar,pinch of salt ,pepper powder,cumin powder and mix well .
  • Bring the water to required consistency .
For potato stuffing:

  • Boil the potatoes and mash them well.
  • Add chili powder and salt to it and mix well.


Final assembly:

  • Make a hole in middle of the puri .
  • Add potato stuffing
  • Add green chutney and add little tamarind chutney
  • Gobble them as is .



Note:

  • Because you are making the puris in wheat flour the puris has to be browned a bit before taking it out .
  • You can also prepare chutney using dates instead of tamarind from the recipe here .
  • Adding of rawmango gives a tngy taste to the green chutney so add it according to your wish (little or more ).
  • Store the puris in an airtight container .Take it out when you are ready to serve .
