Creamy Avocado Dip Recipe | Quick Dressing | Healthy Dip

Avocado dip-One of the creamiest dip i ever made at home.Yogurt and lime adds the required sourness while roasted cumin and cilantro makes the dip flavorful.Jalapeno adds a mild spice the dip requires.Overall yogurt blends with the fruit making  a rich,creamy  and healthy dressing.

Vegetarian Burrito Recipe | Kidney Bean - Avocado Filling

      Burrito a national dish of mexico.Authentic burrito's are made with all purpose flour and are called flour tortillas.Burritos are often totally wrapped around the filling completely like a wrap and filling varies.Burrito fillings are only meat and refried beans in mexico.
    Now tortillas are available in wheatflour for diet watchers.Green - Spinach wheat tortillas are even healthier option.

      Strawberry salsa a quick and refreshing dip for party,game night or get together events.To party, the most occurring summer event.To all wonderful parties ,this bright red colour strawberry salsa sure brings some extra energy.
     To play in park ,have a cool lemonade,blow bubbles,have a long road trip licking ice cream's -sure is a dream in the winter. But you can def enjoy this salsa ,in warmth of your heater.
   No more strawberry recipes,this is the last one.May be i change my mind if i find a batch of wonderful looking strawberries again(hehe).

Tomatillos sauce/Verde sauce/Enchilada sauce

This is called tomatillo sauce because its made of tomatillo aka mexican tomatoes ..The tomatillos are usually covered with inedible paper like husk,that has to be removed while cooking. When tomatillos are  harvested ripen they are a little sweet compared to regular tomatillos and  used in jams.

           This sauce also called verde sauce because "verde" in spanish means "green". Mexican tomatoes have a lot of seeds which you can see in the sauce. This sauce usually is tangy but not very hot. You can add heat by adding jalapeneo pepper which is  a mexican pepper and little ting of garlic. These are the key ingredients which makes this wonderful sauce.Usually sauce is used for enchiladas and can be used as a dip as well .

             There are many variations to this sauce available ,this is my version and we like it a lot .I usually try to do little difference to our dinners with the ingredients available at hand .So feel free to add ur variations and dont forget to write to me .You can use this sauce for pizzas as well instead of regular tomato sauce.

Bean Enchiladas/Mexican Recipes/Easy mexican Recipes

Enchilada mean a corn tortillas(falt corn bread) wrapped in different filling like bean ,veg ,meat ,cheese and covered with sauce .I have made bean enchilada with tomatillo sauce.
There are three preparation in this recipe .One is stuffing (beans) next is sauce preparation (tomatillo sauce) next is assemblying .I am going to concentrate on filling and assembly in this post .Sauce ,i will explain it in my next post.
 I already mentioned many times our liking towards mexican cuisine -for its similarity to indian cuisine , there are many meatless option too that is a special reason why i love mexican cuisine.

I normally do

  1. Soups
  2. Quesadilla
  3. Enchilidas
  4. Burritos
  5. Tortilla chips
 that suit our palates ( i mean there will be some indian touches here and there ).I normally dont check any mexican recipes but its inspired taste from the resturants we eat .

Quesadilla:
Quesadilla is made from corn or flour tortillas filled with cheese and sometime veggies and cheese to form a sandwich

Enchiladas:
Enchilada is a wraps/rolls with veggies,meat,cheese in corn tortillas along with roho(red) or verde(tomatillo) or mole sauce(chocolate sauce)

Burrito:
Burrito is a wrap with flour tortillas ,rice,beans /meat.


When we get bored of our regular dinners we used to do mexican varieties.This enchiladas can be made very special with oaxaca cheese which is a mexican cheese and with red /gree sauce covered with some more cheese .Thinking itself i am on cloud nine.

Guacamole Made from Scratch.

Hope you people had a great start of this new year 2014 .This year brings all the goodness and wellness you want .I am going to start this Year with a healthy dip ..Guacamole ...
Guacamole is a versatile mexican condiment.You will find this served as a dip along with tortilla chips and also as a meal accompaniment in mexican restaurants. I like to use it as spread when I make sandwiches and quesadillas.
Guacamole is made with avacado which has 35% more potassium than bananas , rich in folic acid and vitamin k and it has higer fiber content. It reduces cholesterol levels. This is a simple recipe and it can be made in a jiffy.When you have chips and you want a healthy dip to eat with them .You can have this for sure.
This is a great party pleaser as well.

Corn tortillas from scratch/Home made corn tortillas

After a fantastic mexican salsa and juice post today I am posting the tortillas totally made from scratch.
Tortillas are a faltbread made with corn flour like rice flour chappathis (akki roti) in texture ,but more healthier than rice rotis.You can eat it with whatever veggies you have. You can make quesadillas ( A mexican version of grilled sandwich ) by placing a slice between two tortillas and grilling. If there are leftovers you can store them in the fridge and have them later.

I buy fresh tortillas (not frozen) and keep them in fridge and use them within a month. They last a long time.The store I buy them from is little farther from my place. I am too lazy to get it because its getting cold here. So I bought maseca flour from  one of the mexican stores. I tried making tortillas today and they turned out very well.

This recipe asks for tortilla maker. But I dont have one. Find my trick to make tortillas below

Easy mexican recipes/Pineapple salsa/Pineapple juice

Pineapple is a wonderful fruit with an amazing sweet and sour taste. We eat our pineapple as  is or with little chili powder and salt. I have always felt that adding salt and a little chili powder brightens the taste of the pineapple.

Pineapple is a tropical fruit and I have read that Mexico is the largest producer of pineapple.
I love mexican food. We live close to a hispanic neighbourhood and the mexican cusine here is amazing. We are lucky to have a bunch of good hispanics restaurants and grocery stores here. The other day I brought a whole pineapple and half of it was left over. I had this idea of making a pineapple salsa. Salsa is versatile condiment you can use it as a dip or as a topping for main courses or just as a side dish. Enjoy this yummy pinepple salsa.

Green gram dal and purple cabbage burrito

In my fridge you will always find corn tortillas. I use them to make tacos and burritos. I make veggie burritos by stuffing tortillas with fresh grilled veggies and black beans. Its a quick and healthy week day dinner.
I had some sprouted green gram dal left over and I used them instead of black beans in the burrito. It came out well. I wanted to share the recipe with you all..

Vegetarian Black Bean Soup|Spicy Bean Soup

        Black Bean Soup-One of the classical dishes of Cuba,Mexico is black bean soup.This is a Spicy vegetarian version(no meat) of black bean soup with chili and coriander powder.We usually have this soup for dinner at least once a week.Soak the beans for minimum 8 hours if using dried ones.If in case you forgot ,soak the black beans in hot water for 4 hours at least.
    Lentils are the staple protein diet for any vegetarian.Being a vegetarian i love all the beans and lentils.This black  bean soup has been my favourite for almost 3 years now.

 Health benefits of  Black turtle bean :
      Black bean is iron rich and is rich in potassium,magnesium,calcium and vitamin B6.Also rich in folate and has high dietary fibre.

Variations you can make with this soup:
  1.  You can add grated cheese or cheese slices to make a creamy soup.
  2.  You can use canned beans , filter the water and wash the beans again in fresh water.
  3.  You can use fresh sliced mushrooms.This step is completely optional.
  4. You can use hot sauce along with chili and coriander powder.
